Vegetable Samosas
2 1/2 cups flour
1/2 teaspoon salt
1 cup nondairy milk (I use soy)
2 small potatoes, peeled and quartered
1 tablespoon olive oil
1 small onion, chopped
1 clove garlic, minced
1 tablespoon freshly grated ginger
1 teaspoon curry paste (I use India Chef Korma sauce)
1 teaspoon ground coriander
salt, to taste
1 1/2 cups green peas
2 tablespoons lemon juice
1. To make the dough, place flour and salt in food processor with dough blade. Mix. Add milk. Mix and pulse until dough forms a ball. Add additional flour if needed.
2. Remove dough and knead for 1 minute. Cover dough tightly and refrigerate. The dough should be pretty soft. To make the filling, boil potatoes until soft. Lightly mash, leaving some chunks. In a pan with a little oil, saute onions, garlic, ginger, korma, coriander, and salt until onions are soft.
3. Add peas and lemon juice about half way through. Combine potatoes and onion/peas mixture. Let cool for at least 15 minutes before filling pastries. Preheat the oven to 425 degrees Fahrenheit. To assemble, make 12 (1") balls from the dough.
4. Flour hands and rolling pin. Get a small bowl of water and a fork. On a clean floured surface, one at a time, roll the dough out into a 5 or 6" circle. Put filling in center of circle. (it really will all fit in the 12 samosas if you do it right.). Use your finger to apply water around the edges of the dough to make it sticky.
5. Pull dough together to make crescent shape. Crimp edges firmly with fork. Place samosa on cookie sheet and bake 15 minutes at 425 degrees F, turn oven to 375 degrees F, turn over, and bake 10 minutes. Remove from sheet, place on a plate and let them cool.

Anyhow, as much as I messed with the recipe, these turned out great anyways! :) They were spicy, amde 12 delicious samosas. Even my meat-eating mom liked them :)
The one issue I had was that the dough, when baking, became dry. Next time, I'm going to melt some Earth balance, or olive oil, maybe with minced garlic, and brush that on to try to help prevent that.

very easy to make, and turned out very well! my first time making something like this. I made mine in triangle shapes :)

I love this recipe! They're really filling. I made the pastry with whole wheat flour, so they tasted really healthy... In a good way. The dough was really easy to work with. Thanks for this!
The filling is super yummy. I just used curry powder instead of the sauce. Also added a little soymilk and grated carrots. I definitely had less filling than dough so I would recommend using three small potatoes or adding in some cauliflower too.
The dough turned out really tough. Still good but I would play around with the recipe. Anyone have a good recipe for some type of dipping sauce to go with the samosas?
I didn't have Korma sauce or coriander, so I jkust added a mix of ginger, chili powder, cumin, and cayenne.
Since many people were complaining the dough was bland, I added some applesauce and cornstarch as binders- can't even taste them- and a bit of ginger.
I also didn't have any carrots, and I cut down on the peas because it seemed like too much.
Also, I sauteed the mashed potatoes in the olive oil with the rest of the veggies. And I rubbed some spices on the potatoes before I boiled them (made the kitchen smell good :)).

Just made these! YUM!The filling seemed to last if not overstuffed- though I cheated and rolled out the last two dough balls with powdered sugar, and filled them with a chocolate/almond butter mixture . PMS, what can I say. It also took me WAY more than an hour, but that's just me...
This was definately good, I made it tonight for dinner along with some steamed cabbage 8-)
Although I went off of memory so I made two big ones instead of 12 small ones >.< and I could only eat half of one before I got full, so I gave the rest to my dad and he really liked it even though he is a major carnavore :P ;)b
