Vegetarian Stuffing

What you need: 

6 cups bread, diced
2 tablespoons margarine
1 medium onion, diced
3 stalks celery, sliced
2 large carrots, peeled and thinly sliced
1/4 teaspoon rosemary
1/4 teaspoon thyme
1/4 teaspoon sage
1/4 cup fresh parsley, chopped
3 tablespoons raisins
1/2 to 3/4 of a red delicious apple, optional
1/4 cup walnuts
1/4 cup pecans
1/2 teaspoon salt, or to taste
1 1/2 cups vegetable stock
pepper, to taste

What you do: 

1. Preheat oven to 350 degrees. Place vegan bread in a 9 x 13 baking pan and place in oven for about 15 minutes, until the vegan bread is well toasted. Meanwhile, warm the margarine in a saucepan and saute onion, celery and carrots over medium heat until onion is translucent.
2. Remove vegan bread from oven and add onion mixture, herbs, parsley, raisins, optional apple, nuts and salt. Mix well. Carefully drizzle the stuffing with vegetable stock and toss gently.
3. Bake, uncovered, for 20-30 minutes. Season with black pepper if desired.

SO HOW'D IT GO?

Hey, so I live in a land of no ovens. Any idea how I could do this in a microwave? I really want to make a nice Thanksgiving meal still if at all possible!  ???

I made this stuffing for the first time yesterday, it is delish!!  ;)b
My meat-eating dad stopped by last night so I asked him totry it and he said he really liked it too. (he usually gets a horrified look on his face when I ask him to try any of my cooking. Apparently if there is no animal carcass involved it can't be edible!!)

Then, shockingly, this morning he called to ask if I had any extra stuffing so he could stuff his turkey with it! I know gross, but it goes to show what a pretty impressive stuffing recipe this is!!

I made the stuffing today and must say it's divine. I think next time i'll add more apple as it gave it an undisovered (for my tastebuds) taste. I loved it. Now lets see if the rest of the family will even notice :)

oh aaaaannnnnnnnddd, I chopped up the raisins a bit as i was a tad thrown off by just adding them in whole and they're great :)

I'm not sure if it was me or the recipe...but the stuffing was very bland and lacked a lot of flavor.

I had such a craving for stuffing the other day (weird I know) and was really unsure about making it. I thought it would be a disaster because I'd never made it before, but you never know until you try! I made this and it turned out so good. The amount of spices were just right! I didn't add the raisins, nuts, apples and carrots because I also wanted it to be "traditional" And now i'm so in love with this recipe! Thank you!

I added two apples, dried cherries along with golden raisins. So good.

This stuff is awesome!!!  I added some poultry seasoning to it  and about a half of a bulb of garlic (I'm a garlic addict) it turned out sooooooo good.  I flipped it three times to get it all slightly crisp.  It was moist and delicious!!! I will make this again. Thanks for such wonderful goodness!!! :D
