Veggie Stew with Dumplings

What you need: 

Stew:
2 teaspoons vegetable stock concentrate
1 cup boiling water
1 teaspoon Herbs de Provence (rosemary, thyme, marjoram, summer savory, basil, sage and tarragon)
1 teaspoon oregano
2 tablespoons olive oil
1 cup turnip, peeled and diced
1 cup onion, chopped
1 cup carrot, diced
1/2 cup celery, sliced
1 clove garlic, minced
2 bay leaves
1 tablespoon fresh parsley, chopped
1/2 teaspoon rosemary
1/2 teaspoon basil
2 cups water
5 teaspoons tamari
2-3 potatoes, peeled and chopped
1 cup frozen peas
2 tablespoons cornstarch + 2 tablespoons water
salt and pepper, to taste Dumplings:
1 cup all-purpose flour
2 teaspoons baking powder
1/2 teaspoon salt
1/4 cup parsley, chopped
1/2 cup nondairy milk (I use soy)
2 tablespoons vegetable oil

What you do: 

1. For stew, blend first four ingredients and set aside. Sauté turnip, onion, carrot, celery, bay leaves, rosemary, basil, garlic and parsley in oil for 8 minutes.
2. Add water, broth mixture, tamari and potatoes. Simmer for 10-15 minutes. Add peas, continue cooking another few minutes. Remove bay leaves. Combine cornstarch and water, add to stew, and stir until thickened. Season to taste with salt and pepper.
3. For dumplings, sift dry ingredients together then add parsley. Mix milk with oil and add to dry ingredients (just stir until moistened). Drop mixture by tablespoonfuls onto stew. Cover and cook for 15 minutes (Do NOT lift the lid!)
I should have warned you guys that it (this recipe) has a lot of ingredients and looks lengthy. But I swear it a snap to make!'

SO HOW'D IT GO?

i had to do quite a bit of subbing, but it turned out really good!  sooo, i didnt have turnips, carrots , or celery so instead i used frozen broccoli, corn, & spinach.  i also didnt have any herbs de provence so i just used an italian seasoning blend.  unfortunatly i didnt have any bay leaves (damn old roommate took them all) so i had to go without on that one.  anyway, i added so many veggies (cus i did have 3 redskin potatoes and peas like the recipe called for and i just threw stuff in without measuring them) that i ended up having to add a 15oz can of vegetable broth to make it into a soup again and i added more seasoning to compensate for the extra liquid.  the dumplings cooked up puffy and chewy and yum.  (im guessing this is how theyre supposed to be cus ive never made or eaten any kinda dumpling soup before)

next time im gonna use a un-chicken boullion cube, add some morningstar chicken strips and make sure i have carrots and celery around.  maybe even throw in some quinoa or brown rice, too.

Wonderul recipe! I hadn't had dumplings in soup since I was living at home as a teenager and this was perfect! Thanks for the great recipe!

So, I've not yet made this soup, but I use the simple dumpling recipe fairly often. I know, not much to it, but it was the first one I'd attempted! I use it in "beef" stew and it's great comfort food. I use olive oil in them, though.

I have found that this recipe works well with pretty much any veggies you might have lying around... The other night I used onion, carrots, leeks, green beans, and potatoes, and it was still delicious! Also, I use half whole wheat flour and a few tablespoons of flax seed (with dried rosemary in the winter when we don't have fresh parsley anymore) for the dumplings. This is still one of my favorites! ;)b

Just wanted to say, this recipe made it's way into my top 5 :) It's a treat on cold winter days, especially heated up for lunch! :D

Wow! Next time I'm doubling the recipe so I'll have some leftovers. This is more filling than you would think, however. I think I would prefer the dumplings smaller, but this is probably the best soup that I have ever made. My fiance loves it too.

mmm. i made this tonight for dinner and everyone liked it! yay! (:
i didnt have any turnips so i just put in a little more potato.
i wanted to put in some mushrooms but the ones in the fridge where..older than i thought..and were sprouting little furry things. 
still, it was really great on a super cold day. (:

Okay, this may seem like a weird question, but I plan on making this for dinner tonight, and I am confused about where it says "blend first four ingredients." Do they just mean mix it up, or actually blend it in a blender? Thanks!

is this ever tasty! I'm not a great cook, and I loved what I made from this recipe! (so proud of myself)

I halved it, since I didn't know how much it would make. I also didn't do the dumplings because I didn't have time - but, whatever! it's soo good. I think it made enough for 2 or 3 servings.
