Very Simple Blueberry Muffins
What you need:
1 1/2 cups flour
1/2 cup sugar
2 teaspoons baking powder
1 teaspoon salt
3/4 cup nondairy milk
1/4 cup vegetable oil
1 cup frozen blueberries
What you do:
1. Preheat oven to 400 degrees F. Place baking cups in a muffin pan.
2. In a mixing bowl, combine flour, sugar, baking powder, and salt. Stir in nondairy milk and oil.
3. Fold in blueberries. Pour into baking cups and bake for 25 to 30 minutes.

I hadn't had a blueberry muffin for years, before I went vegan. I had this mad craving for months before I finally decided to bake them. I substituted whole wheat flour and used cane sugar. They came out perfect!! And I'm picky about my baking. My brother REALLY dislikes blueberry muffins, but he had one, and LOVED it!!! He said I got the texture and sweetness perfect. A week later, they were still tender and soft. I'll be using this recipe often :)>>> Thanks!!
These muffins are amazing! I used brown sugar and 50/50 white/wheat flour, and they were delicious. So good, they were all gone by the end of the day (my non-vegan roommates loved them)

Recently i've been craving for baking items...since this recipe is so easy and it's like ABC I'd baked them awhile ago and yes it's good...yum! My mom a non-vegan likes it too! ;)
I've made these acouple of times, the fruit always sink to the bottom even if I toss them in flour. Any suggestions? What am I doing wrong?
