Very Simple Blueberry Muffins
What you need:
1 1/2 cups flour
1/2 cup sugar
2 teaspoons baking powder
1 teaspoon salt
3/4 cup nondairy milk
1/4 cup vegetable oil
1 cup frozen blueberries
What you do:
1. Preheat oven to 400 degrees F. Place baking cups in a muffin pan.
2. In a mixing bowl, combine flour, sugar, baking powder, and salt. Stir in nondairy milk and oil.
3. Fold in blueberries. Pour into baking cups and bake for 25 to 30 minutes.

:)>>> Yummy...I've already made these three times. I have a baby with a soy allergy so I used hempseed milk and they turned out awesome. The second time I tried using applesauce instead of oil...still good but I definitely liked thee oil best.....wonder why...oh yeah and i used all whole wheat flour and olive oil...and extra blueberries....mine where rather purple as well! Thanks for the tasty goodness!
This recipe is sooooo awesome! I make it all the time. I double the recipe so I can make 6 gigantic muffins. They're great when they're really warm and smothered with Vegan butter spread. I also use half wheat flour and half unbleached white flour. Sometimes oat flour instead of wheat flour. I am so grateful for this easy recipe!
So I've probably reviewed these about a gazillion times, but here goes another one since I did them differently. First, I actually had soy milk this time, and the texture is way different. The top is all crunchy and hard, and the inside is a little coarser. I think they're a little sweeter, too, since I used vanilla soy milk. I think I liked them better with water. Second, I used paper cups in the muffin tins, and I think that encouraged them to burn. Again, not so good, but I don't have to wash my muffin tins (just throw away a bunch of paper cups).
i used applesauce and wheat flour instead, and i dont recomend doing that. They were flavorless, even the blueberries tasted bland. i'm going to try to remake these and go by the original recipe. they seem simple enough to get right but apparently i did something very wrong.. :-\

Hey :) I imagine that's fine, haven't done it myself, but in other recipes it usually works okay. The only thing is that you will have to reduce the amount you use (by about a third) due to its sweetness, and also reduce the amount of liquid proportionately. So just cancel out the amount of agave you used from the total amount of liquid in the recipe. For example, if the recipe says 1 cup of water, and you used 1/2 cup of agave instead of sugar, then reduce the liquid by 1/2. (I don't mean to sound patronising btw!! I'm just known for being unclear - trying to fix that..)
The only problem that I have found in using liquid sugar replacements is that they can lead towards the end product becoming dense - not sure if it's possible to overcome that.

mmm these look lovely, i made banana and walnut muffins before but they were more like bread than muffins.....definitely going to give them a go..thanks!
Made these again this weekend. I substituted 1/2 finely ground oats for 1/2 cup flour (let the oats soak in the soymilk for a couple of minutes) and added 2 tsp vanilla extract and a squeeze of agave nectar (in addition to the sugar). 1 cup of blueberries is too much for more my kids so I added about 3/4 cup. And of course sprinkle the top of the muffins with some sugar before baking.
They were really good. The entire dozen was consumed within 3 hours, which is sort of a record.
Ok, got so excited about how easy and healthy these looked that I made them three times on two days. I made a batch with frozen raspberries and then switched to vegan semi-sweet choc chips. So yummy! My daughter likes those hostess-mini muffins but I am going to have some of these on hand. Have to figue out the timing for mini muffins. made mine with whole wheat and AP flour mix and used organic unsweetened, applesauce. I think I may make some more now for the morning!
Awesome! For a new vegan, it's nice to find an easy recipe, w/o the "weird" stuff! And soooo delicious!
