Very Simple Blueberry Muffins

What you need: 

1 1/2 cups flour
1/2 cup sugar
2 teaspoons baking powder
1 teaspoon salt
3/4 cup nondairy milk
1/4 cup vegetable oil
1 cup frozen blueberries

What you do: 

1. Preheat oven to 400 degrees F. Place baking cups in a muffin pan.
2. In a mixing bowl, combine flour, sugar, baking powder, and salt. Stir in nondairy milk and oil.
3. Fold in blueberries. Pour into baking cups and bake for 25 to 30 minutes.

SO HOW'D IT GO?

Fantastic !- couldn't be any simpler and they were the perfect level of sweetness.  I think I added an extra half cup or so of (fresh) blueberries (rinsed and then tossed in a little flour) and they were bursting with gooey yumminess.

i accidentally burned a batch of these and my mom still ate all of them  ;D.... my family can't get enough of these.... i like to cook them in mini-muffin pans....

yummy! these turn out exactly as they should. though cook time for me averaged a good 5-8 mins shorter than the shortest time listed. keep a nose on them. these are delicious. non-vegan family even loves them. i had to go ahead and make a second batch because of this. lol. mom called them 'dangerously good' as in she 's gonna eat too many.  ;)

I have been living off of these things for the past two months! Instead of blueberries I have been using chocolate chips and I truly, truly love them! Truly!

I used fresh bluberries about a tub and a half and subbed one tablespoon of the oil for apple sauce(1/4cup=4 tbsp)  and half a cup of white flour for whole wheat. It was perfect. I sprinkled them with sugar which made them crunchy and sweet on the top. This is a new fav.

Thanks veggiepeeler23 for this substitution tip. I followed your advice and my muffins were just the right texture and sweetness. Didn't stick to the paper either like other muffin recipes I've tried.

These are very good. They are soft and moist. I used 3/4 cup unbleached flour and 3/4 cup whole wheat pastry flour. I also replaced the oil with applesauce. I made 6 large muffins.

I made these with blackberries (they grow wild across the street from me and I love free things, hee hee) and they look great. Probably won't eat one until tomorrow or maybe for a snack later, but I'm sure they will be delicious since the batter I ate was good. I also subbed applesauce for the oil. Thanks for such a simple and quick recipe!

Totally delicious!!!  I used an entire pint of fresh blueberries sprinkled with flour so they stay put in the batter, 3/4 c sugar and then made a crumble topping using flour, sugar, cinnamon and smart balance light (it's VEGAN!).  Ohhh man, these are fabulous and so simple to make.

these came out great with cranberries since they actually held their place. i may comment on it being too sweet, so i think i will cut the sugar next time. with whole wheat flour and applesauce, these turned out better than expected. however, i found that baking them for 30 minutes still had the muffins a little doughy,, so ill remember to bake them longer next time. great recipe, however! cant wait to try these gain..

i am baking these right now, and all i can say is that they are so far turning out beautifully (about 7 minutes in already), and the batter tasted great.  i greased a muffin pan and used 1/6 cup of brown sugar, with the rest being regular sugar. didnt have any blueberries, so i subbed with 1/4 cup of cranberries, and hopefully they turn out well. i also used whole wheat flour and put a little baking soda with the baking powder. for the oil i used 4oz of cinnamon applesauce. i shall hope these hold their consistency!
