Very Simple Blueberry Muffins

What you need: 

1 1/2 cups flour
1/2 cup sugar
2 teaspoons baking powder
1 teaspoon salt
3/4 cup nondairy milk
1/4 cup vegetable oil
1 cup frozen blueberries

What you do: 

1. Preheat oven to 400 degrees F. Place baking cups in a muffin pan.
2. In a mixing bowl, combine flour, sugar, baking powder, and salt. Stir in nondairy milk and oil.
3. Fold in blueberries. Pour into baking cups and bake for 25 to 30 minutes.

SO HOW'D IT GO?

Wow, these taste just as good as all the complex vegan muffin recipes I have but I love that it uses simple ingredients! I put in a teeny bit more soymilk, a little less salt, and just eyeballed the blueberries (I bet this would be good with any kind of berry/fruit, or even coconut flakes or cinnamon chips or something).
They made 12 mini muffins for me and baked in about 17 minutes.

Yum! These muffins were delicious. I followed the recipe exactly, used a jumbo muffin tin sprayed with olive oil, no paper liners, and they were mmmmmmm.. scrumptious.

These are so moist and delicious! I ate all 6 muffins in one sitting..  ;D

I did make some substitutions though:
Instead of 1 1/2 cups flour, I used 1 cup cake flour and 1/2 cup wheat bran.
Because of the cake flour, I cut the baking powder down to 1 1/2 tsp.
And, finally, I used 1/4 cup banana instead of the oil.

Any tips on how to prevent the blueberries from sinking to the bottom of the muffins? I tried tossing them in a little flour, but that didn't work too well... I only used about 2 Tablespoons of flour, do I need to use more?

These are SO yummy!  Used 3/4 cup white flour and 3/4 cup wheat flour, sucanat, and applesauce for the oil.  Sprinkled some more sucanat on top, and they are delicious!  And so easy, anyone should be able to whip these up with no problems...enjoy!

I am new to the vegan lifestyle. I baked these muffins and my non-vegan family members loved them! My grandmother couldn't believe how easy they were for me to make and how healthy compared to her recipe. I, too, used a.sausce instead of oil, and they were just perfect. Thank you for the easy vegan recipe!

I made a couple of changes to the recipe: I used 1/4 cup of packed brown sugar and replaced the oil with mashed banana, and it came out pretty good. There was a yummy crust and it wasn't too sweet. One word of warning: be careful if you are using frozen blueberries. The ones I used were rather bland and watery. Great recipe.

I make these often for after-school programs and for my omni coworkers, and everyone always loves them. I always use 1/4 cup of applesauce instead of 1/4 cup of oil, and I think it helps them stay nice and moist.
