Very Simple Blueberry Muffins

What you need: 

1 1/2 cups flour
1/2 cup sugar
2 teaspoons baking powder
1 teaspoon salt
3/4 cup nondairy milk
1/4 cup vegetable oil
1 cup frozen blueberries

What you do: 

1. Preheat oven to 400 degrees F. Place baking cups in a muffin pan.
2. In a mixing bowl, combine flour, sugar, baking powder, and salt. Stir in nondairy milk and oil.
3. Fold in blueberries. Pour into baking cups and bake for 25 to 30 minutes.

SO HOW'D IT GO?

I make these muffins quite often. they truly are simple, and easy to make.
i have a 14 month old and a 3 1/2 yr old, and they both gobble them up.
i  use whole wheat flour, and the next time i make them, i belive i will use mashed banana as the binder. Delicous! they are never around long enough for me to get a photo. i'll have to work on that.

These tasted great with my morning tea. I made some small adjustments for a little healthier muffin and they still came out with sweet, puffy tops. My substitutes:

1 cup all-purpose flour + 1/2 cup wheat flour for 1 1/2 cups flour
1 Tablespoon oil + 1/2 mashed banana for 1/4 cup oil

Great Recipe! I used whole wheat flour, (vegan) maraschino cherries and bananas and they turned out great!

I made these with 100% whole wheat flour and subbed a little baking soda for some of the baking powder.  They came out quite well, so thanks!

These were SO GOOD! Not to sweet, but still marvelous! I substituted surgar with maple syrup, since I can't find any brown surgar, and they turned out AMAZING! Taste wonderous with soy butter and/or cinnamon & brown surgar, or plain. Anywho MUST make this again. I love how easy it is, and doesn't call for crazy ingrediants!!  :D

omg, these are so good. I used fresh bluberries about a tub and a half and subbed one tablespoon of the oil for apple sauce(1/4cup=4 tbsp)  and half a cup of white flour for whole wheat. It was perfect. I sprinkled them with sugar which made them crunchy and sweet on the top. This is a new fav.

Wow! These are sooooo good! It made 10 muffins for me, and I ate 3 of them already! My mom even thought they were good-she ate 2 of 'em! I'm saving the rest for breakfast tomorrow. I'll definitely make these again. It's weird, too, because I don't like blueberries usually.  :)

I know this recipe calls for frozen blueberries, but would it be okay if I used regular, not frozen blueberries? Thanks. :)

These muffins were easy and turned out beautiful.  My husband loved them, but they were missing something for me.  I might try adding 3/4c sugar next time and maybe some cinnamon.  Pretty good overall, though!  :)
