Very Simple Blueberry Muffins
What you need:
1 1/2 cups flour
1/2 cup sugar
2 teaspoons baking powder
1 teaspoon salt
3/4 cup nondairy milk
1/4 cup vegetable oil
1 cup frozen blueberries
What you do:
1. Preheat oven to 400 degrees F. Place baking cups in a muffin pan.
2. In a mixing bowl, combine flour, sugar, baking powder, and salt. Stir in nondairy milk and oil.
3. Fold in blueberries. Pour into baking cups and bake for 25 to 30 minutes.

these were great :) i halved the recipe just to try it, and used a couple strawberries along with the blueberries because i didn't wanna use all my blueberries ::) also, i used whole wheat pastry flour and whole wheat flour and unsweetened applesauce instead of oil. yum! i most definately am going to be making these again as soon as i get more pastry flour
I was a bit skeptical about making these due to such simplicity, but boooooy there turn out soooo yummy. I ate 6 in one sitting before they even cool down! I will be making these over and over and over again. Thanks for sharing!
I love this recipe, because it's made with stuff that's always in my pantry! Cheap and easy, my two favorite things!
If you have trouble with the berries sinking to the bottom of your muffins, toss them in a little bit of flour before you fold them into the batter. It'll help them keep their position in the muffins while baking and they won't settle. :)
What an excellent recipe! These are so easy, so tasty, and they just work perfectly. Great consistency, they rise well. I used about 1 1/4 cup raspberries instead of blueberries (for valentine's day) and it turned out very well. This will be go to recipe from now on for very simple muffins. Non-vegan office mates gobbled them up!
I love how simple these muffins are. They're so tasty too. Both of my daughters liked them too. I had no problems with them at all. They could have used a few more blueberries though. Great muffins!
I mean baked not cooked! LOL
I made mini muffins and cooked them for 17 minutes. Also, used applesauce instead of oil. Overall they taste pretty decent. Maybe I'll try them with the brown sugar next time.
These are pretty good. I used whole wheat pastry flour and brown sugar (was out of regular), so my muffins were much darker and almost tasted like they had cornmeal in them. I like how the were less sweet than most blueberry muffins, but they were almost too unsweet, so next time I think I may try 3/4 cup sugar instead. My favorite part is how they top is crunchy, I love that. I got 6 jumbo muffins. All in all, pretty good.
Turned out great. Added extra blueberries. ::) Used a greased muffin tin and they turned out very nice. My daughter loves them.
