Very Simple Blueberry Muffins

What you need: 

1 1/2 cups flour
1/2 cup sugar
2 teaspoons baking powder
1 teaspoon salt
3/4 cup nondairy milk
1/4 cup vegetable oil
1 cup frozen blueberries

What you do: 

1. Preheat oven to 400 degrees F. Place baking cups in a muffin pan.
2. In a mixing bowl, combine flour, sugar, baking powder, and salt. Stir in nondairy milk and oil.
3. Fold in blueberries. Pour into baking cups and bake for 25 to 30 minutes.

SO HOW'D IT GO?

This is a great recipe. I had a hard time putting the batter in the muffin tin b/c I just wanted to eat it out of the bowl!

As others mentioned, I had everything for the muffins in my cupboard, whereas other recipes I looked up involved vegan butter spread/margarine or orange juice. As far as ingredients, I used almond milk and threw in an extra handful of berries (fresh, 'tis the season!!) like others suggested.

This recipe made 12 medium-sized muffins. I thought thirty minutes would be too long, but it was the perfect amount of baking time.

I just made these, and they are pretty good. I personally like mine sweeter so i would probably try 3/4 cup of sugar next time :-) Thanks for the recipe

idk what happened i doubled the recipe and honestly it was sooo unsweet almost bitter. it was dry and stuck to the roof of my mouth. wierd consistency.i didnt like it at all i dont know why this is the top recipe. sorry just my opinion.

These are amazingly simple and delicious.  My boyfriend and I tend to gobble them up pretty fast, they are dangerous.  I follow the recipe pretty close with one exception, I use applesauce instead of oil, more specifically cinnamon applesauce since that's what I had on hand.  I also use vanilla rice milk for the non dairy milk, I think it gives it a nice little boost of flavor.  Thanks for the recipe, I love it!

I made these to take to a get together of non-veg friends. They loved them. The only change I made was using whole wheat flour. I also made it into 12 muffins, so I baked them around 22 minutes. Thanks for the great recipe!

These turned out really good.
I used more blueberries than called for, added some oatmeal and a banana.

I made these muffins and they are super yummy.  I made a few modifications though. 

I doubled the recipe because I wanted to take some to a friend who just had a baby and have a few left for me.  I found that the muffins were too clumpy, though still tasted great.  If you double it add a little more milk, maybe 1/4-1/2 cup extra. 
I added a little extra sugar, not sure how much, I didn't measure the extra, but just a little.  I also added orange extract.  Yum!  Blueberry Orange muffins.  Also, as another reviewer suggested I did a little less flour and added oats in it's place.  I also added extra blueberries. 
Winning recipe with a few modifications!

These were great!  I used whole wheat flour and turbinado sugar...and I had to add a little extra soymilk.  Just perfect!
