Wheat-Free Oatmeal-Apple Zookies

What you need: 

1 cup rolled oats (not instant)
1 cup vegan puffed rice cereal (or other puffed grain)
1 small apple
1/2 medium-sized zucchini (I think they're called courgettes in Europe?)
1 tablespoon brown sugar
1/4 teaspoon salt
1/2 teaspoon vanilla extract
cinnamon, allspice, nutmeg, cloves
(optional) vegan chocolate chips, raisins, etc

What you do: 

Heat the oven to 375 degrees F. In a food processor or blender, process 1/2 cup oats and the rice cereal together until its a coarse meal. Pour the ground rice/oats into a bowl and add 1/2 cup unground rolled oats. Finely grate the zucchini (or chop it up in a food processor) and chop the apple very fine. Mix the zucchini & apple into the dry mixture. Add enough water to make a sticky dough (a little softer than regular cookie dough). Mix in the salt, vanilla, and spices (to taste) and any other stuff (chips, nuts, etc) you like. Drop onto a greased cookie sheet (or use parchment paper) in small lumps (about 1/2 T or so) -- you should get about 24 of them (although you can of course make them bigger...). Bake for about 15-25 minutes or until they're as set as you like them.
As described above, with about 1/4 c chocolate chips and made into 24 cookies, each cookie has about 40 calories and very little fat.
The grated zucchini gives the texture of coconut in these cookies, but if you don't like that texture, then grinding in a food processor would probably fix it. You could also substitute applesauce for the apples, or bananas, etc. These cookies come out very soft and chewy.
And, for the record, its NOT a typo: I meant to write zookies :-)
