Yellow & Green Confetti Salad
2 stalks celery
2 small yellow squash
1 large or 2 small yellow peppers
2 tablespoon fresh basil, chopped
1/4 cup fresh parsley, chopped
2 tablespoons quality olive oil
2-3 tablespoons quality white wine vinegar
1/2 teaspoon lemon pepper
salt and pepper to taste
This recipe is super easy. Chop all the veggies into small bits (for the "confetti" effect). Once the veggies are chopped, add the olive oil, vinegar, parsley, basil and seasonings. Stir gently and adjust seasonings to taste. The soft crunch of the raw squash is nicely paired with the crunchy crunch of the celery and pepper. The oil, vinegar and fresh herbs make this a flavorful, light, refreshing salad perfect for summer.
