Yummy Tofu Salad Sandwiches

What you need: 

1 block firm tofu
1 chopped red onion
4 cloves garlic, minced
Spike or other herb seasoning to taste
1 teaspoon parsley
1 avocado, chunked
2 capfuls tamari sauce
1/3 cup nutritional yeast
3 tablespoons veggie mayo
squirt of lemon, if desired
chopped raw almonds
other garnish as inspired

What you do: 

Drain and mash the tofu, get in there and scrunch it with your hands. Add the chopped onion, garlic and yeast; mix. Then add the parsley, tamari sauce and veggie mayo. Mix well. Last, but not least, gently fold in the avocado chunks, and a squirt of lemon and fold together.
I like to toast some good grainy bread and spread the salad on one slice then sprinkle with chopped raw almonds.
One can also add the garnishes of choice, like sprouts lettuce, tomato etc.....
This will serve a small group of hungry people.

SO HOW'D IT GO?

Pretty good.  I only used half a small onion and that was plenty.  The avocado and almonds are yummy in there.  I don't know if I would make this again, but it is a good change of pace for a tofu salad sandwich.

I found this to be super tasty! I wasn't exactly sure what to expect flavor wise, but it makes a dang good sandwich. I would describe the taste as very garlicky, onion, almost cheese like...I didn't put in the avocado(as mine were rotten beyond all recognition)but next time I plan to just slice the avocado thinly and layer on top of the spread. Very good on hot toast with Earth Balance. And my 2 year will eat this with a spoon  ;)
