Zucchini Bites
2 tablespoons vegan parmesan or nutritional yeast
1 tablespoon parsley
salt, to taste
pinch garlic powder
1/4 cup vegan mayonnaise (I love Vegenaise!)
2 zucchini, sliced 1/4" to 1/2"
1. Preheat toaster oven or regular oven to broil. In a small bowl, mix together vegan parmesan, parsley, salt, and garlic powder.
2. Spread a tiny bit of vegan mayo on one side of a zucchini round, and dip the side with the mayo into the bowl of parmesan mix so that the parmesan sticks the the mayo.
3. Place the zucchini parmesan side up on a baking sheet. Repeat with remaining zucchini. Stick pan in the oven until the tops look golden, about 10 minutes.
You can cook these so they are still a little firm like finger food, or if they get a bit too cooked, you can eat them as a side with a fork. Yum!
Source of recipe: My mother used to make these but they were not vegan. I used to love these little bites of yummy zukes and found that it was super easy to veganize.
SO HOW'D IT GO?
I used 1/2 cup veganaise and 2 zucchinis to fit the other measurements you gave. I didn't have a corrugated knife, so I just cut the zucchs at an angle to make them more attractive.
I will definitely make them again!
I'd say 7 minutes in the broiler- as you can see, mine got a little too much sun, but they were still great.
I am so glad that my husband is a veggie-phobe right now... I don't have to share these! ;)
Made these other night, they were right good! Great way to use up extra courgettes quickly!
I was pushed for time so I mixed all the ingredients together in the mayo and just spread it on each slice of zucchini. It worked very well!
So delicious! These are my favorite quick appetizer to whip up when people call to say they're coming over!

Delicious! I used nutritional yeast cuz i love the taste. didn't need any salt. Broiled about 9 mins. I had some seasoning left over so i made it with sliced mushrooms (broiled 5 mins) and those were even more amazing!!! tasted like cheesy stuffed mushrooms.
I made these and my husband LOVED them!
I used nutritional yeast and followed the recipe...
but I dipped the zucchini too much in the seasonings
so I need to go lighter next time. It looks like the
parmesan melts (from the pictures) and might give a better texture/taste.
Like I said my husband loved them so I will make them again!
I cut them pretty thick and broiled them about 7 minutes.
