I am cooking this soup & I have a question for the poster of this recipe...or any one else that may know. What is the purpose of the bread slices?
I just added this recipe to my recipe box & am hoping that I have time this weekend to make this soup. It sounds wonderful. I'll be back..... ;)

This is delicious :) I used one large carrot & a parsnip, which gave wonderful flavour. Also, I didn't add hot sauce but I did add 1 tsp.

This recipe was kind of hard to follow. I had to write out all the ingredients before hand, so I didn't forget anything but WOW, is it ever tasty! Leftovers the next day were even better.
I absolutely love any type of winter squash & always seem to have at least 3 different kinds at any given time.
CW, I would think that an average sized Butternut would do fine.

I haven't made this soup in a while & I just happen to have some lovely squash on my counter.  ^-^

I doubled this recipe for a bbq today & got many compliments. It is very fresh tasting. I think next time I make it, I will use lime juice.

No, sorry I haven't tried subbing applesauce yet, but I don't see why it wouldn't work. I think for the first attempt, I'd do half applesauce & half oil.
