We used only one large onion and one red bell pepper.
We also used nutritional yeast instead of parm.
YUM. I'm a little surprised that it was that good.

Hey Michelle
I just toasted the quinoa in a pot then I just added the broth and potatoes to the quinoa. Then I went on to step 2, 3, ... etc.
It turned out great.
This was really good. I added Daiya cheddar cheese to the sauce. I also used italian style diced tomatoes and italian style bread crumbs. I do think that it needed a little bit of salt though.

This was really yummy! Just like Amymylove suggested I will try to brown the soysauge before adding it to the soup next time. I really liked this recipe though.

These were delicious!
I covered them with homemade chocolate frosting, I just used butter, soymilk, cocoa powder, and powdered sugar.

These were really delicious.

I almost completely cooked the potatoes and carrots, then I added the salsa mix. It was very delicious.
