Great recipe thanks. I only added a couple of dashes of chili powder and used rice wine vinegar. I also added a few squirts of lime juice. I want to try it with the coconut milk addition.
I added about 6 cloves of garlic from my garlic presser, 4 carrots, a little cumin and liquid smoke. Omitted the leeks and celery , next time I will add an extra onion for more flavor.
Just to add, it tasted much more flavorful today and got nice and thick...I even ate some cold. Some foods just taste better overnite and I really enjoyed it today.
Since I love all recipes by PIP, I decided to make this right away....yes at 11:30pm! I used agave for the sweetner and it was declared a success by my bf. Its so easy too.
My bf loved it...said it tastes fresh. I added a little avacado and grape tomatoes. However for my bf it only serves 2 for a dinner meal. Thanks...definitely make again.
