Camping Food Ideas and Recipes

hi all
My partner and I will be cycle touring for 2 weeks next month, self-supported. I'd like to make some tasty, yet easy, meals. I'm leaning towards the kind that you premake at home and just add one or two ingredients at camp. We'll be able to buy some supplies en route.
Any ideas? We'll have a camp stove, pot, pan.

Lara bars are dense. SOy jerky, I think it's called Stonewalls...., If you'll be stopping to make fires and stuff take instant rice, lentils, TVP
I usually get less hungry when I'm backpacking. I kind of compromise with what I'd normally eat. For breakfast, I'll have a couple of packets of flavored instant oatmeal. I eat it out of the pouch, I don't add water or anything. Then for a snack I'll have things with long and short energy, like GORP type food (GORP = Good Ol' Raisins and Peanuts). For lunch, I'll have tofu jerkey. There're also a lot of instant foods, like hummus, where you just add water and can eat with crackers or whatever. Then for dinner, you can have soup with bullion, freeze dried vegetables (like Just Tomatoes brand), and instant dried "chicken." Check for those by the TVP.
And peanut butter - the sugary kind. I don't know if you want to lug around bread, but you could have PB&Js for lunch. That'd only be twelve slices of bread. Or, if you don't have room for the bread, you could have sandwiches for half of the lunches.
So many fake meats are dehydrated that I think it's pretty easy to get vegan protein. Also, there are powdered protein shakes, if you're concerned.

I was going to say that I didn't think the little oatmeal pouches would hold up with water...but then I noticed that you didn't use water! I need to slow down when reading other people's posts. ;)

Hey my fellow peeps!
I'm going camping in a few weeks and I wanted to take along some goodies for the camp fire! I've seen Sweet & Sara Vegan Marshmallows on several vegan food sites and have been considering ordering some--but they are like $6 a package and you usually have to order a minimum for shipping...has anyone ever tried them before? Are they worth the cost? Please let me know :)
Any other treats I should take with me (besides booze...I'm sure there will be plenty of that *lol*) Thanks my hommies!!

Lucky you! I was just thinking this evening about campfires and installing a fireplace in my place...
you can order a marshmallow making kits from foodfight.com, it's alot cheaper to make your own.
you gotta bring baked beans and cornbread, too.
I've had the Sweet & Sara's marshmallows in the toasted coconut. They were delicious! I got mine from Vegan Essentials. I'd make it worth it by ordering a few other things, too.

I didn't try toasting them over a fire. However, I'm pretty sure I made s'mores microwave-style, and they turned out gooey and fabulous! I've never been a huge fan of marshmallows, but they really were good enough to even eat on their own.

I broke down and ordered some Sweet and Sara marshmallows--vanilla for roasting and coconut for munching. Lots of sugar, but I burn a lot of energy at work, so it all balances out, right? ::)
We're also bringing veggie dogs (we're going to try the Field Roast Mexican Chipotle ones...will report back on their yumminess) for dinner, maybe some sort of salad, and then pancakes and oatmeal for breakfast. Lunches will probably be hummus sandwiches or PB and J. Might also pick up some Tofurky jerky because that stuff is yummers.
I've made things in foil packets before that were yummy--just put whatever veggies you want, seasonings, sauces, etc. in tin foil and wrap it up well. Stick it in the coals and you have fresh roasted veggies! Just make sure they are cut pretty small so they cook all the way through.

If you want a quick and portable dinner, the Indian food that comes in the foil packets work really well too. Boil some water and throw them in and voila- Indian food in the woods!

I was at REI today (picking up a trowel...) and I wandered into the camp food area--I'm praying i'll get a chance to go on a long thur hike next year so I wanted to see what they had--one of the brands had 5 specifically vegan dinners!!! I was so stocked!!! They are expensive though--$8.50 each!!!! That's a lot of cash for one meal--multiply that by 3 a day for 6 months and my whole budget will be spent on food! I guess I need to pick up an edible plants guide book...
And totally looking forward to it! Will and I are going with my father and his new wife and 5 dogs. I didn't really know my father growing up, so this will be our first holiday together (except for one Christmas at my grandparents when he inexplicably showed up when I was 15 or 16).
I am soliciting ideas for food. I've got the traditional camping stuff covered. They aren't even close to v*gan, but are pretty open minded. My step-mother even said she had a new recipe for a sweet potato sandwich that she's been holding onto for me. That got me thinking about ways we could do something quasi-traditional, but still be camp friendly. I'm thinking I could make a decent stove-top type thing for dressing; gravy is a cinch, sounds like she's got the sweet potatoes. I'm thinking green bean casserole could be camp friendly with a few modifications. I dunno. Will and I even talked about bringing tofurkey slices.
Anybody got any ideas?

You could bake regular potatoes, onions, sweet potatoes or apples w/ brown sugar and cinnamon in the campfire.
Pumpkin pancakes? Pumpkin oatmeal? For breakfast? Or dessert?
How about a trail mix or granola with cinnamon, dried cranberries and pecans?
Hot spiced apple cider?
