I simply dare not post a third review of your Veggies with Couscous Recipe, because for some odd reason no one else has and it makes me shy. I just wanted to say this recipe has become a staple in my house, I prepare it at least 3-4 times a month! When you consider that DH wouldn't touch anything with zucchini in it (like George Carlin, he won't eat anything with a z in it or that sounds like "yuch"), and it's just him and me--well, I end up eating it several days a month. Even for breakfast!
I do press the tofu before adding it, and I add some hot sauce sometimes. It's a real good munch! More power to you! 8)
I've looked at that recipe before and it does look good! My hangup is that I buy couscous out of bulk bins and have no idea how much couscous would be equivalent to one package.
I just measure out about a cup and a half of couscous, and prepare it with twice the boiling water, and find I have about 3 cups plus of cooked couscous. I leave the left over couscous in the fridge for breakfast or leftover stirfry purposes.
