Banana Walnut Bread
1 cup all-purpose flour
3/4 cup whole wheat flour
1 cup sugar
1 teaspoon baking soda
1/2 teaspoon salt
4 extra-ripe (almost black) bananas
1/4 cup vegetable oil
1/3 cup soy buttermilk*
6 tablespoons applesauce
1 2.25 oz bag chopped walnuts
Pre-heat oven to 325 Fahrenheit.
In a large mixing bowl, combine dry ingredients. Set aside.
In a medium mixing bowl, mix together bananas, oil, applesauce and buttermilk (*note: add 2 teaspoons lemon juice to the soy milk).
Mix banana mixture into the dry mixture and then fold in walnuts and pour into a greased loaf pan.
Bake at 325 for 1 hour and 15 minutes or until toothpick comes out clean. Let cool on baking rack for 15 minutes.
Cut into thick pieces and serve spread with Smart Balance butteery spread. It’s vegan and delish!

this recipe is disastrous! I tried it twice, following exactly the same step and the results were horrible! No fluffy texture as what banana bread supposed to be...Instead it's gummy and very very dense. I baked it even a little longer than the recipe and still turned out that way. Bad recipe. I don't know why all of you said this is a good recipe. I give this recipe ZERO RATING! >:(
Very Good! Made for my work-chums in an effort to use up the bananas that have been sitting in my fruitbowl for over a week (yikes!). I didn't have applesauce so I used 4 tbsp of maple syrup (cut down the brown sugar to 3/4 cup), extra 2 tbsp of oil, added vanilla extract, and a tsp of baking powder. I baked it in a glass loaf pan for the full hour and 15 minutes. Definitely the most moist and spongy banana bread I've ever had! Excellent recipe, will make again :)
I made this with half wheat flour and half oat flour and it came out very moist and tasty. It didn't rise quite as much but it was very good. A dash of cinnamon was a wonderful "tweak."
Very simple and good! I left out the salt and didn't miss it, and I think a dash of cinnamon would improve what is already a good recipe. Something just seemed to be missing.
