Almond Butter
What you need:
whole raw almonds
salt, optional
What you do:
** Of course, this may also be made using the humble peanut and very good it is too.
Using no oil, toast the almonds in the oven, stirring every few minutes, until beginning to change color. Cool.
Place in a food processor and grind until very fine. Continue to process until the almonds begin to release their oil, resting the motor from time to time. Process until oily and smooth. Store in an airtight jar. * Dont be tempted to think the oil will not release. I assure you it WILL happen.

This is definitely a wonderful way to make almond butter!! I make raw almond butter all the time and this is by far the easiest way that I have made it yet! I have always used a blender, but it took a while to make and I kept having to scrape the sides. With a food processor you hardly ever have to do that! I was SO excited when I found this on here! I went and actually made some within a couple hours of seeing the recipe and it did great!
For those who get discouraged because it seems to be more crumbly and isn't grinding to butter, it will, but it does take some patience. The oils have to have time to come out so that it will turn to a creamy consistency. They will only come out once the almonds are finely ground. The first stage is almond crumbles, then it become very thick almond paste, then it becomes almond butter. So keep that in mind. When my mother and I first made it a long time ago it seemed to be taking forever and it wasn't turning out like we thought it would. Right when we were just about to give up, it actually started to turn into a butter.

so all I had for this was sliced almonds. It kind of worked, but is very thick and pasty - not easy to spread. I gave it a good whiz in the food processor (10-15 min) & expected it to become thinner/oilier...maybe it's because they were sliced. It's still good though!

I used my nut grinder until it turned into a powder, never released any of the oil as far as I can tell. Just ate the rest of it on some celery sticks, still never creamed it. Should I use my food processor instead? I would really like this to turn out the way it is suppose to.
A food processor works much better than a nut grinder.
I guess that answers my question too. It's a shame as I really wanted to try this recipe, but really don't have the space for a processer :(
So my 12 yr old hand blender finally died the other week - meaning I bought a new hand blender, which has several different attachments. Result = yummy peanut butter.
I used plain skinless peanuts and oh my god I think I am in heaven. I don't think I'll ever bother to buy peanut butter again.
I went to the health food store last week end and stocked up on cashews, peanuts & sunflower seeds.
So far I've only tried peanut butter, but sunflower seed butter & cashew butter are also on my list (I didn't even bother roasting the peanuts and it was great). I think I may have to buy some brazil nuts soon!
Honestly this is fantastic and the possibilities are endless. Thank you sooooo much.
PS with my brand spanking new blender it only took about 1-2 minutes on high speed to form a 'butter'.

a blender might work...like a magic bullet type thing?
there are smaller food processors that are like 3-4 cups that might be small enough for ya?
O.K.....attempted this again in the food processor. Same results...I think my nuts were old or something. I had to add some canola oil in order for it to cream up. Thanks everybody for all your help.

Oh wow! This looks so good!
I really want to try it, but only have a hand blender that can't cope with nuts (last time I tried it started to smoke quite a bit!!).
I have a lack of space in my kitchen so can't get a proper food processor - does anyone know if a grinder / chopper would be ok for this?
