Amazing and Versatile Rice & Lentils

What you need: 

1 medium sized onion, diced
2 cloves garlic, crushed
2 tablespoons oil
salt and pepper, to taste
1 cup rice
1 cup lentils
4 cup water/bouillon

What you do: 

1. Saute onion and garlic in the oil in medium sized pot, until golden or brown. I like to really brown the onions for the flavor. Season, to taste.
2. After the onions/garlic are as browned as you like them, add the rice, lentils, and water.
3. Bring to a boil, then turn heat to low and simmer for about 30-35 minutes, or until all the water is gone and the rice and lentils are tender but not mushy. Enjoy!
You could add spices according to what you want to make it. An Indian version might include curry powder, chili powder, cinnamon, and cumin. A Mediterranean version might add some tomatoes, basil, parsley, and oregano (topped with a little lemon juice after cooking), or finish off with a little tamari soy sauce after cooking.

SO HOW'D IT GO?

Sooooo good! I made it with brown lentils and white rice. I sweated onions and carrots in butter, added garlic, then threw in some wine. I rinsed my lentils and rice, then added those, the water, and a veggie "stock pot" (Knorr brand, tasty). I cooked it covered for a few minutes, then took the cover off and let it be free to simmer for about 25mins. A little salt and pepper, and it's so good! Probably 6 servings, though. Good for lunch tomorrow! My husband also loves it, and this is probably the first time he's liked a non-Indian style lentil dish. Huzzah!

This was yummy. I have never had lentils before so I was excited to try it. I cooked up some onions, carrots, celery, and red bell peppers, then added the lentils with 2 cups water 2 cups veggie stock and cooked for 15 minutes, then added the rice and cooked for another 15. I used oregano, basil, pepper, lemon pepper seasoning and lemon juice, then topped it off with some yummy cherry tomatos I roasted in the oven for 30 min in a bit of olive oil. It was amazing! I highly reccomend adding the roasted tomatos on top because it adds a bit of sweetness and really made the dish for me. Thanks for the great base recipe.

HAVE MADE RECIPES LIKE THIS FOR YEARS.  LATELY I HAVE BEEN EATING THIS WITH THE PEANUT KALE, WHICH IS A RECIPE FROM THIS SITE.  FILLING AND NOURISHING.

I like how this recipe is billed as the foundation for what kind of rice and lentil dish you want.  I caramelized a large onion then deglazed with wine.  That was the ground work for deliciousness.  I toasted 2 tsp. cumin seeds then toasted the rice before adding my lentils and a little curry powder.  It turned out so great and comforting.  :)>>>

Wonderful and simple recipe. I added cumin, seasoned salt, turmeric, and garlic powder (because I omitted fresh garlic out of laziness).I also used 3/4 cup of lentils and rice instead of 1 cup and 2 tsp of olive oil in place of 2 tbsp. It came out really good! 8)

This was great!  I made a half recipe and had plenty of leftovers for a few more meals (I'm eating some now to lunch and it is great 2nd day too).  I used veg broth and added shredded cabbage, frozen spinach, a can of diced tomatoes, 1 tsp of curry powder and a pinch of parsley.  So good!!!

This was great! It took me a bit longer than it said here to cook, but then I used brown rice and doubled the amounts.

I didn't have any onions on hand, but did have some fresh ginger, so I sauteed the ginger and garlic together, then added the rice and water with spices and a little later the lentils and water and a few more spices. Spices I used: salt and pepper, cayenne pepper, minced onion, and some lemon grass.

Turned out super yummy - I'll be eating the leftovers all week and will definitely make more another time. :)

Ohhh, I can't wait to try this!  I was looking for a simple recipe to make.  This looks like something I can go home, throw everything into the rice cooker and let it rip, and go out to the  playground with my little M while it cooks.  This will be dinner tonight.  I like the idea of adding a can of tomatos, I am a tomato fanatic so that should be good.

I used cumin, curry and a little bit of coriander for the spice. I added celery and then tomatoes.
