The Best Breakfast Scramble Ever!

What you need: 

Cheez sauce:
1/2 cup flour
1/2 cup nutritional yeast
1 teaspoon garlic powder
2 cups water
1 teaspoon yellow mustard
4 tablespoons vegan margarine (I use Earth Balance) Stir fry:
1/2 onion, chopped
1/2 green pepper, chopped
cooking oil, as needed
1 pound extra firm tofu, drained and crumbled (not silken style)
pinch turmeric, optional
salt and pepper, to taste

What you do: 

1. For cheez sauce, mix first 3 ingredients together in sauce pan. Add water and mix thoroughly. Heat on medium until thick and bubbly. Remove from heat and add mustard and margarine. Set aside.
2. For stir fry, saute onion and green pepper in oil. When they are good and soft, move them to the sides of the pan and form an empty circle in the middle for your tofu.
3. Add more oil to the middle of the pan, then add your drained, crumbled tofu. When it starts to get golden, mix in the peppers and onion and keep frying. You can add some turmeric for color, if you like.
4. When it looks like you could eat it, add the cheez sauce and mix it all in to coat, until that becomes golden brown too. I saute this for another couple of minutes. You might not need all of the sauce. I save the leftovers for pizza or nachos. Add salt and pepper to taste (this makes all the difference!).
Eat! This is soooo good and it’s great on toast or English muffins (I use Matthew's brand). I don't miss eggs at all after discovering this!

Oh and where can I buy nutritional yeast?  I went to a couple of grocery stores looking for it and I couldn't.  I live in Canada.  Other than the nutritional yeast I have all the other items on hand.  I bought yellow mustard powder yesterday.

Nutritional Yeast is called Savoury Yeast or Savoury Yeast Flakes in New Zealand. Maybe it's the same in Canada. Just don't buy Brewer's Yeast.

I was just want to confirm about this recipe,   "1 teaspoon yellow mustard"  is this whole mustard or mustard powder?  Can someone please confirm I want to give this recipe a try on saturday.

yes, its mustard the condiment, not ground, but like said above, I'm sure you could substitute! Even if you left it out it will still be good.

Hey :) I believe the recipe means mustard sauce (i.e. not seeds/powder) however i'm sure powder would be okay, just might want to use less of it and add a touch of vinegar + salt to make up for that. Regarding nut. yeast, I've never seen it in a normal grocery store before, however nearly all good health stores should supply it (I'm sure in Canada the health stores are pretty good). Just make sure not to buy baking yeast! :)

I made this yesterday for breakfast and it was awesome. I added some halved cherry tomatoes and two vegan sausage patties I browned and then crumbled in...DH had seconds and totally cleaned the pan. It's a keeper.

I loved this too.  I saved most of the sauce to go on other things as well.  I used alot of different veggies because I had some left over that I needed to use up.  You could really throw anything in it, and it would be great.

Oooh, this was really good!  I threw in a whole load of veggies and some fresh herbs, and it was fantastic.

This recipe is good. I've been on the fence about tofu scrambles, too, because they always came out so dry and blah. I added the spices I usually use with scramble: cumin, paprika, pepper, chili powder, tumeric, and the addition of the sauce took it to new levels of yumminess.
I ate in on a bagel with some earth balance. Highly recommend this recipe! :)

everyone is right - this is really good!  my bf said it was the best tofu scram i ever made!  great idea to add the cheeze sauce (i halved the sauce recipe and had more than plenty to smother the scram over english muffins) - got me thinking, though - i might try it without the garlic powder, add lemon, and try to fudge a vegan hollandaise sauce!  you can add any veggies you like (i used spinach, red bell pepper, and green onions), and the leftovers are great, too!

It really is the best scramble ever!! I make this at least once a week for me and my little one. It is great leftover, too, wrapped in a tortilla with some salsa for a filling breakfast on the go.

I made it for my omnivorous family over the holidays and they all thought it was terrific too. Even the people that are totally grossed out by the thought of eating tofu...I didn't tell them what was in it just that it was a healthy breakfast scramble  ;D and they all devoured it!
