Black Bean Polenta Cakes

What you need: 

1 1/2 cups prepared polenta (4 servings)
1 - 14 ounce can black beans, drained and rinsed
1/4 cup salsa
Handful cilantro, chopped
1/4 teaspoon cayenne pepper
1/4 teaspoon red pepper flakes
Hot sauce, as desired
Vegan sour cream, as desired
Cooking spray or oil

What you do: 

1) Prepare 4 servings of polenta as directed on the package. Add black beans, salsa, cilantro, cayenne, and red pepper flakes, and hot sauce. Cook for a few minutes more on low heat to thicken the mixture up. Transfer to a bowl. Cover the mixture with plastic wrap and place in the refrigerator for about an hour.
2) Shape the polenta mixture into 24 - 1" round disks. Either coat a large frying pan with oil or use cooking spray. Cook the disks on medium heat for 3 to 5 minutes per side.
Serve with vegan sour cream. Yum!
Variations: This side dish can certainly be altered in several ways. Besides salsa, any veggie would work. Next time, I'm adding some corn and peppers.
Source of recipe: I just had the idea in my head and tried it out last night. It tastes great!
