SO HOW'D IT GO?
Excellent recipe!! The main instruction left out is to let the batter sit for 15 to 20 minutes before pouring. I also made some additions: 2 Tbl ground flax, 1/4'ish cup of a flour (I like spelt) 1 tsp baking powder, 1/2 tsp baking soda, replaced the water with milk (I like 1 c almond and 1 c coconut), and I increased the vanilla to 2 tsp (I like vanilla). I also didn't care if the bananas were bruised as I find the older bananas have better flavor.
The real trick to keep them from sticking is to spray the bottom plate of the waffle iron with oil (just enough to lightly coat), then add the batter, then spray the upper plate and immediately close the lid. I have yet been able to burn a waffle or have one stick. I also always use the highest heat setting on my waffle iron.
Another trick I've learned, if you want to add fresh fruit (blueberries, peaches, etc.), after spraying, put down a thin layer of batter, put on the fruit (preferably frozen), a thin layer of batter over just the fruit, spray the top and close and cook.
I used to be a bisquick man (the Heart Healthy Bisquick is vegan), but this is my new base recipe from now on!

we love this recipe. i follow it exactly, and while they do come out a bit "gooey", it's not an issue because i freeze them and then pop them in the toaster on the weekend (i hate having to clean a waffle iron on a lazy saturday morning!) also, letting the batter rest in the fridge for about 20-30 minutes makes a big difference (as another reviewer suggested!) i think the blender is a great idea, and makes pouring into the iron SO much easier. my husband says these are his favorite waffles and that they are much more interesting and flavorful than "regular" waffles. personally, they remind me of the banana oatmeal i ate as a little kid so it's kind of nostalgic for me! thanks for a great recipe! ::)
I actually went out and bought a wafflemaker for this recipe (I've been wanting to make waffles for years now). I love the idea of oat waffles; but mine were a bit gooey on the inside, soft on the outside and the flavor was a bit bland. I think most reviewers made adjustments to the original recipe and came out with a very good product. Unfortunately I am a novice at making waffles and stuck to the exact recipe. I will not give up though - I will strive for a yummy, crispy waffle.
O.K. 2nd attempt. Went overboard with the additions (leftover shredded coconut, chopped pecans, 4 dates instead of sugar, 1 cup water, 1 cup almond milk, sunflower seeds, baking powder). Also left it in the wafflemaker for approximately 7 minutes. I know - what was I thinking. But the waffles came out golden brown, crispy on the outside (still a tad bit undercooked on the inside - but not bad). They were really tasty. Topped them with maple syrup (the real stuff) and I didn't even notice that they were a little gooey with the addition of the syrup.

I ended making pancakes with this recipe. I added blueberries and a tbsp or two of whole wheat flour just to thicken it up a bit. I served it with home-made blueberry jam and mango.
:> Such a yummy way to start the morning!
I'm a sad panda because these sounded so good but didn't turn out well for me. They stuck really badly to my waffle iron (which is brand new and non-stick) and were gooey in the middle and burnt on the outside. I could have played with the temperature setting and added oil to the batter but the mess was so bad it took forever to clean off. Ended up adding a chemical leavener to the batter and made pancakes. They were decent enough to not be a total flop. Does anyone else have a Villaware Round Belgian Waffle Baker that they have problems with as far as sticking? Mine often come apart down the middle and I am left with two halves fixed on the top and bottom :(. I'm still looking for the perfect vegan waffle recipe and one thing I have read is that you really need oil in a waffle batter, but don't ever oil the plates if the baker has the non-stick surface. BTW I used a little coconut oil to grease the pan for the pancakes and added chocolate chips when they were done and the flavors were great together.
Nyan! I made pancakes, used half the water, half the banana (the rest of the banana had bad spots, lol)
They held together wonderful, they tasted pretty good. I drizzeled on some agave, but they were still a bit bland.
The texture is bit different from regular pancakes, but that's not really a bad thing.
Super easy to make, I would definetly reccomend them :)
so damn good!! I did half flour half oats, perfect. Thanks!!
These were great! Very filling too, I added some oat bran and used flax seed instead of banana and added a little bit of soy milk in addition to the water. When I started gathering the ingredients my boyfriend looked like at me and said uhhh what are you doing with oats?!? But after eating them he was like "Okay wow these were way better than I thought!!"
