Cabbage Summer Rolls

What you need: 

8 green cabbage leaves (tender inside leaves work best)
2 1/4 ounces Maifun rice noodles
1/2 cup daikon radish, shredded
1/2 cup carrot, shredded
15 basil leaves, minced
1 tablespoon toasted sesame oil
1 tablespoon rice vinegar
1 tablespoon soy sauce
2 teaspoons minced ginger
1 scallion, minced
1/4 cup peanuts, chopped, optional
wasabi paste, to serve, optional

What you do: 

1. Wash cabbage leaves and trim bottom (thickest) 1/4 (I like to add this to a stir fry). Pour hot water over noodles and let sit while preparing the remaining ingredients.
2. Combine daikon radish, carrots and basil in a medium size bowl. In a small bowl, combine oil, vinegar, soy sauce, ginger, and scallion.
3. Drain noodles and chop coarsely. Add noodles and liquid mixture to radish, carrots and basil and toss well. Place 1/8 the noodle mixture in a cabbage leaf, turn thin end over and roll from one side to the other.
4. Repeat with remaining cabbage leaves and noodle mixture. Garnish with peanuts and serve with wasabi and soy sauce.
