Caribbean Tahini Dressing

What you need: 

1/2 cup of Tahini
1 big clove of garlic
1/4 teaspoon of salt
4 leave of cilantro (long leaves)
1 teaspoon of fresh lemon juice. (lime works too)
water

What you do: 

Adapted from different sources and my taste of course.
Mix all the ingredients except the water in the blender.
Add water until you get a dip or salad dressing.
Adjust the levels of salt, lemon and water for your taste and purpose.
You can add 2 Caribbean sweet peppers (ajices dulces) but those are hard to find in US. Enjoy!

If you don’t use the right cilantro it won’t taste as should be. The reason is called “Caribbean tahini” is for the use of the big leave cilantro or “recao” (Eryngium foetidum L., Apiaceae). Small leave cilantro could work but is not the same. As a matter of fact a lot of people use tahini in the Caribbean. But do not intent to visit the Caribbean and go to any main stream restaurant and ask for tahini dressing. The same will happen if you ask for tahini dressing in Dennis rest.

The ironic thing is that no one has heard of or uses tahini  in the Caribbean. This recipe looks like a good base though, I will try it.
