'Cheezy' Roasted Potatoes

What you need: 

3 pounds Yukon gold or red potatoes, cubed 1"
1/4 cup extra virgin olive oil
1/4 cup nutritional yeast
2 to 3 tablespoons dried parsley
1 teaspoon onion powder
salt and pepper, to taste

What you do: 

1. Preheat the oven to 400 degrees F. Place potatoes in a large bowl; pour olive oil over them to coat.
2. Add the nutritional yeast, parsley, onion powder and as much salt and pepper as you like and toss to coat.
3. Pour into a large baking dish (I usually use a 9x13" glass baking dish) or a large cookie sheet with a rim and bake for 1 hour, stirring once halfway through.
These are so easy, but turn out nice and crispy and browned! You could add any other spices you like, but I think they're best just plain. Dig in and enjoy!

I added oregano to mine instead of dried parsley (didn't have any), and it had a very interesting taste. I am definitely making these again the next time I get the chance.

yummy! eyeballed the ingredients, and added rosemary instead of parsley, and added garlic powder, too. sooo good - a definite keeper!  ::)

I tried this using cauliflower and OH MY GOD was it good!!! I also used garlic powder instead of onion powder. Seriously delicious.

I really liked these. I've made them twice now, raising the temperature to 425 degrees,  adding a lot more onion powder and sprinkling with smoked paprika...yum!

I made this AGAIN! We love it. It is so versatile and I like that. This time I did red potatoes, butternut squash and brussell sprouts! Totally tasty.

We love these!  :)>>> Tonight was the 2nd time I made them, and I also made a batch using cauliflower instead of potatoes, too. They were both super tasty! I used garlic powder instead of onion powder because I didn't have any.

These were pretty yummy! I think I had too many potatoes for the coating so next time I'll double the coating so their drenched like VeganSapien's pictures :o Wow wee!

Wow, these were surprisingly fabulous! We scarfed these down speedy quick and had a small fight as to who was worthy of seconds...

I probably used more oil and nooch than called for...I didn't measure.  Just stirred the oil, nooch and onion powder together to make a thick sauce, then tossed it with the potato slices. I used fresh parsley since I never seem to have dried on hand. Also, I sliced the yukons extra thin so then would get nice and crisp...mmm...seriously amazing. I am debating whether or not I should make them again today...
