Chickenless Chiken and Dumplins

What you need: 

1 quart. box No Chicken chicken broth
2 regular size vegetable bouillon cubes
16 oz. hot water
2 cups of Betty Crocker Bisquick Original All-Purpose Baking Mix
2/3 cup of soy milk

What you do: 

Dissolve bouillon in hot water, add no chicken chicken broth. Bring to a boil.
Meanwhile, mix soy milk with baking mix until a sticky dough forms. Reduce heat to medium and add dough a spoonful at a time.
Stir gently and spoon a bit of broth over tops of dumplings.
Let simmer at a low boil for 10 minutes. The dumplings should break up and thicken the broth considerably. Add pepper to taste.
Enjoy!

SO HOW'D IT GO?

I make this all the time! I usually pop some potatoes, carrots, onions, and peas in there. The "dumplins" are the bomb! Thank goodness for Bisquick! I love that stuff. I have started putting dumplins on all kinds of things lately. I put them on chili the other day. SO GOOD! ;D

Re the Bisquick argument.  Here in the Eastern US, Bisquick comes in 2 varieties (regular and reduced fat), but both are multipurpose and by definition are dairy, since they are called "Buttermilk Baking Mix" and do indeed contain buttermilk.  Tell me where there is any other kind?  I actually prefer the Hodgson Mill Insta-Bake, Whole Wheat variety baking Mix with Buttermilk, but I'm going for healthy and not vegan...

The regular Bisquick brand in the Yellow box - is baking mix - and does not contain Dairy.
Again this is on the Peta list too.
If you are still leary of using it - simply make your own.
Just use a  biscuit recipe and after you have cut in the shortening - add your liquid but add extra 'milk' (i use soy) to get the right texture for dumplins - I have also added dried herbs to the dumplin mix too.
And for those who do not have a biscuit recipe handy - 2 to 21/4 C self rising flour - 1/4 to 1/3c veg shortening - and @ 1 cup of 'milk' ---

I'm in FL, USA and my mix wasnt buttermilk or any milk lol. I bought it at Publix. I know some states differ in what they carry as that also differs store to store and not all states have Publix grocery. But, I'm lucky enough that mine was completely vegan, not even a speck of caseinate haha. Yay!

The commenter above me said that bisquick pancake mix contains dairy. Everyone, always check the label!!! I have general bisquick mix at home and it has a recipe for pancakes, biscuits, and dumplings (the first two of which I've made vegan and turned out GREAT) and my mix is vegan. I think it is a regional thing so dont write this off!

I've been dying to make some dumplings every since I bought the stupid box of bisquick but I used the whole thing on pancakes. ::sigh:: Eventually, I will come back to this recipe...
