Chocolate Chip Cookies-Like They Should Be

What you need: 

3/4 cup raw sugar
3/4 cup brown sugar
1 cup vegan margarine
1 teaspoon vanilla
1/4-1/3 cup applesauce (enough to equal 1 egg)
2 1/4 cups flour
1 teaspoon baking soda
1 teaspoon salt
1 (12 ounce) bag vegan semi-sweet chocolate chips

What you do: 

1. Heat oven to 370 degrees Fahrenheit. Beat sugars, margarine, vanilla, and applesauce together in a large bowl.
3. Stir in flour, baking soda, and salt. (Dough will be somewhat stiff). Stir in chocolate chips.
3. Drop by rounded teaspoonfuls onto a cookie sheet. Bake for 10-15 minutes, or until light brown. Cool.
This is a recipe that my mom has been making my entire life, and I was so so so excited that they turned out so well after substituting a few things.

Those cookies look delicious. I hate to compare, but has anyone who has made these also made the Happy Vegan chocolate chip cookies, and if so, which do you prefer? I really like the Happy Vegan ones and have been disappointed by other recipes, so I was just curious.

I feel a bit bad comparing too...but I have to say that I find this recipe to be much more satisfying. When I made the Happy Vegan cookies, everyone could tell they were "vegan" (you know, in that unimpressed, vegan-phobic way that non-vegans use the word). With this recipe, nobody could tell the difference (there were no apprehensive squinty eyes before eating them). They taste better than any chocolate chip cookies I ever made with eggs and butter.

Let me just say that baking is NOT my forte when it comes to cooking...especially cookies...but this recipe was so simple and snappy, that it's perfect!! As recommended by so many others, I used 3/4 cup vegan margarine. Instead of using 1/3 applesauce, I used 2/3 applesauce + 1 egg in Ener-G Egg Replacer. I added a tbs of peanut butter, no salt, and added 1 cup of vanilla soymilk since the mixture was incredibly dry, which made the cookies turn out big and fluffy. To my surprise, the first batch of cookies came out HUMONGOUS! This recipe makes A LOT of cookies which is great because I'm taking them to my step-brother's birthday party.

This time, I used 1/2 cup margarine, 1/2 cup applesauce, plus the 1/3 cup of applesauce stated in the recipe. They spread very little while baking, and turned out fully cooked but soft, which is how I like them. Not greasy at all, but still nice and moist! I only used one cup of chocolate chips and that was plenty. Also used 1-1/3 cup of all raw sugar, and had to add a good 1/3 cup of extra flour.

I used all raw sugar (no brown sugar in the house), used a flax egg instead of applesauce, used only 8 oz of chocolate chips, and added almost a half a cup of soymilk. Without the soymilk, the batter was waaay too dry.

I think I put too many cookies on the baking sheet. The cookies spread more than I thought they would. The edges are nice and crisp, the inside of the cookies is softer, just how I like them. I may reduce the margarine to 3/4 cup next time, as the cookies are a bit greasy. Still delicious, though!

this dough tastes DELICIOUS!!!  i'm waiting for the oven to heat up but i just know already that this is a winner!

Instead of applesauce, I used egg replacer. I'm in a junk food mood and I didn't want anything to taste to healthy. lol

I also used 1/2 tsp of almond extract instead of vanilla and grated orange peel and one fresh orange squeezed into it. YUMMY!!!! :)>>>

sucanet for raw sugar

buckwheat flour and potato flour (gluten-free goodness) instead of regular flour

I will make these again.

oh! also, i did sub the applesauce for a banana since i didn't have any applesauce at the moment.

:)>>> WOW! 1st I want to say that the unbaked dough was soooo reminiscent of that Pillsbury dough in the plastic tube we all ate as kids that I was shocked. Yummy yummy yummy! I'm actually surprised so much of the dough ended up in the oven, lol. 2nd, the cookies were awesome! This is definitely my favorite cookie recipe now. Thank you so much for posting!!!  ;)b

This recipe ROCKS...  I did add the PB and increase the apple sauce as suggested.  These didn't last long at my house.  My entire non-vegan house LOVED them!  ;)b
