Chocolate Pudding

What you need: 

1 1/2 cups soy milk
3 tablespoon cornstarch
1/4 teaspoon vanilla
1/4 cup maple syrup
1/4 cup cocoa powder
2 bananas, sliced (optional)

What you do: 

Whisk all ingredients (except bananas) together in a pot, over medium heat, stirring constantly until pudding thickens.
Variation: use carob powder instead of chocolate cocoa powder.

I used a bit more cocoa, and instead of vanilla I put in a couple of tablespoons of shredded dried coconut--also a lot more sugar (after using up all my maple syrup). It tasted kind of strong and weird while it was hot, but cold it's much better! The coconut doesn't taste like much over the cocoa taste, but the little bits add interest.

This was pretty good! Mine got really thick after chilling, and the flavor was just a little bit different. I think I'll try to tweak it a bit and see what I can come up with. Thanks for the recipe! :)

I love this recipe so much it hurts.  I make it for my roommates whenever someone is feeling down.  Just like from the box!

saweeeeeet! its in the fridge chilling. i doubled the recipe using 14 oz (1 can) coconut milk and rice milk to equal 3 cups (24 oz) 1/4 brown rice syrup + 2 tbs raw sugar. i also added 1/4 finely shredded coconut just at the end.....oh and 1/2 c chips as i didnt have cocoa powder.

its perfect, rich coconut flavor with a light chocolaty  taste!

i'm really craving pudding right now, but for extra oomf i'm going to use coconut milk instead of soy! :D

this is my standard recipe for chocolate pudding now...it's quick and easy and always turns out delicious. I usually add cinnamon, and sometimes switch the vanilla for almond or mint extract. It's also good with some peanut butter swirled in.
