Chop Suey

What you need: 

3 stalks celery, diced
half a small cabbage, diced
2 large onions, sliced
2 large carrots, sliced
3 tablespoon oil
1 cup vegetable stock
half a teaspoon yeast extract
half a teaspoon soy sauce
2 tablespoon corn
4 tablespoon water
salt & 125g bean sprouts

What you do: 

Heat the oil in a large pan, add all the vegetables except the bean sprouts and stir fry for 3-5 minutes. Add the stock and bring to the boil. Simmer for 5 minutes, add the yeast extract and the soy sauce. Mix the cornflour and water, add to the vegetables, season and cook for another 3-5 minutes. Add the bean sprouts and cook for a further 2 minutes. Serve with boiled rice.

SO HOW'D IT GO?

Instead of vegamite/yeast extract I used 1 tsp soy miso paste and dissolved it in the veg broth before adding to veggies in my wok. I used corn starch to replace the corn flour...maybe its the same in the US as in other places in the world...but this is my US ingredient-ready version. I suppose i couldve used arrowroot powder instead of the corn starch...maybe next time!

Yeast extract is pretty much the same as Marmite/Vegemite. You can buy different brands, though, and they do taste significantly different.

;)  It was filling, and I would likely use the recipe again as a thrifty, filling meal.  A way to use up left over veggies, and good way to use rice.    I didn't have corn flour and used soy flour - not sure if that makes a large difference.  I don't know what yeast extract is but have some nutritional yeast on hand, and used that instead.  Maybe they are the same thing?  With the modifications I used, I don't know if it altered the recipe significantly.
