Christas Killer Fudge
1 cup nut butter of your choice (peanut butter is cheap, but cashew tastes delightful)
1 cup maple syrup(if you're feeling rich) or corn syrup (if you're not)
1/2 to 2/3 cup cocoa or carob powder (amount depends on how chocolatey you like it)
1/4 cup sesame seeds (optional)
Heat the nut butter and syrup together in a heavy-bottomed saucepan over medium heat, stirring constantly. When well combined, remove from heat and stir in the cocoa or carob powder until thoroughly mixed.
Pour into a loaf pan or other smallish casserole dish, and sprinkle with the sesame seeds. Using a spatula or back of your (clean!) hands, lightly press the sesame seeds into the fudge.
Let cool for about an hour, then cut into small squares and enjoy!
Life in the kitchen couldnt be easier than this. This fudge is VERY rich, howe'ver, so start with small pieces and chew it well!

ok i think i changed it alot but i didnt have carob powder.
took 2.5oz unsweet baking chocolate and melted in a double boiler, adding <1/4c soymilk, <1/2c maple syrup, 2 tbsp organic sugar, <1/2 c peanut butter, and a spoonful of earthbalance butter, added walnuts then poured in a 8in round pan,
oh yeah and i did add a little corn starch.
its super good but i wish i used less pb

Totally sinful and yummy. It does take a broad definition of "fudge" but it is certainly good. I used agave syrup and added a heaping TB of instant coffee with the cocoa. I also think I may have heated it too long, but I was able to cool the "batter" a bit, then form into balls and roll in cinnamon and cocoa. Popped 'em in the fridge and voila...instant truffles...yummy. Thanks!
this is DELICIOUS!!! it was very chocolaty, but somehow my fiance and i still managed to eat half of the batch! It was yummy!!!
