Craving-Cure Cookies

What you need: 

1/2 cup brown sugar, packed
1/4 cup dry sweetener of choice
1/3 cup apple sauce
1 teaspoon vanilla extract
3/4 cup whole wheat flour
1/2 teaspoon baking soda
1/2 teaspoon cinnamon
1/4 teaspoon baking powder
1/4 teaspoon salt
1 1/2 cups quick cooking oats
3/4 cup carob chips (or raisins, or something else you like)

What you do: 

1. Preheat oven to 375 degrees F. In a large bowl, mix sugars, apple sauce and vanilla.
2. In another bowl, mix the flour, baking soda, cinnamon, baking powder and salt, then stir into the wet mixture.
3. Add the oats and then the carob chips. Drop rounded teaspoonfuls onto a greased cookie sheet and bake for 8-10 minutes.
Once you add the oats and chips it gets very thick, so you can always add a bit more apple sauce or some water to get it to a better consistency. (I usually don't have to do this). They come out nice and soft! Usually makes about 20-24 cookies depending on how big I make them. Enjoy.

wow this is a healthier version of oatmeal chocolate chip cookies! but do these stay soft/moist or do they dry out easily? would adding a 1bs of oil make a difference?

mine stay relatively moist, but i keep them in the fridge in a ziploc bag after they have cooled :)

Mine have always been moist, but they've never lasted long to see HOW LONG they stay moist.  ;)

I loved these!
I've had problems with rubbery cookies before but these were so moist and very sweet (in a good way!)
I didn't even add nuts or chocolate chips.

Thanks 3relefords. I think I'm going to buy some baking powder on my next shopping trip and try it again. It's always worth another try!

  Not really sure what went wrong, but it may have been the baking soda. I have made these cookies many times with varying ingredients and everyone I have made them for loves them. They are very tasty and easy to prepare. This recipe allows you to be very creative. I would suggest trying these again with the listed ingredients. You should be able to enjoy the dough before you even bake them, if you find that they are too dry, I suggest applesauce. I am relatively new to baking, been a vegan for many years, this is one of my favorite cookies recipes. I hope you are willing to try these again, good luck. :D

AHH!  I don't know what i did wrong! Mine definitely didn't turn out... I'm still getting the vegan baking thing down, so maybe I overlooked something..

I used 1/4 c of brown sugar rather than 1/2 a cup and stevia as my other sweetener. I went by recipe other than that and chose to use 1/2c raisins. Oh.. and I didn't have any baking powder so I used all baking soda instead.. maybe that's what killed me??

Anyway, after I added the oats the mix was so dry that it didn't even stick together. I added another tablespoon of appleasauce and threw in 1/4c soy milk. That seemed to help it out just fine. Even though I only used 1/2 a cup of raisins, there was about 1/8c left over that just would have overwhelmed the batter, so I didn't add the whole 1/2c. When the cookies came out of the oven the were VERY dry and rubbery. Yuck! They tasted like cardboard, and I ended up throwing them away.

Any ideas guys? Y'all seemed to love them. I don't know what I did wrong! :-\

This became my favorite recipe for cookies...yum yum they re so great, chewy and healty!!! I keep making them for my toddler. I always add 1/3 c. nut butter and I put flax meal and  germ wheat instead of flour. Thank you so much!  Best recipe for cookies ever!!

mmmmmmmmmmmm! I put these in a pan, and cut them into bars! I added vegan chocolate chips, which we love! A new favorite, thanks.  :D
