Cream of Broccoli Soup

What you need: 

2 cups fresh or frozen broccoli, chopped
2 cups water
1/4 teaspoon salt
1/8 teaspoon black pepper
1/2 teaspoon powdered sage
1/2 teaspoon dried thyme
1/2 teaspoon garlic powder
2 tablespoons quick-cooking oats
1/2 cup nondairy milk (I use soy)

What you do: 

1. Place all ingredients except milk in a medium saucepan and bring to a boil.
2. Lower heat and simmer 5-7 minutes.
3. Puree in blender. Stir in milk and serve.

SO HOW'D IT GO?

This was *so* easy and very delicious! I added about 7 cloves of garlic to mine though ;P and a tsp of nutritional yeast! Yum!

I did this exactly according to the recipe except that I added a "chicken" flavored bouillon cube.  We really liked it, I'm sure I'll make it again sometime.  :)

Delicious! I used 1/2t of salt and I also added 1/2t of onion powder, 1T of nutritional yeast, better than bullion non chicken base and used corn starch instead of oats as a thickening agent cause i just dont have any oats lol. I also used Mimic Cream instead of soy milk...

oatmeal sounded too weird so i left it out as well as thyme and sage.
it was still great. nice and light. using microwave it was a 4 minute soup. wow!  ;D

I used this as a basic recipe and it was great!

I added more broccoli (I happen to have tons right now!), used veg broth instead of water, added some basil, included 1 tbsp of nutritional yeast and used vegan cream (Alpro Soya) instead of soy milk.

I love this!

I had a lot extra so I stuck it in the freezer to enjoy later.  :)

not bad for something cheap & easy with ingredients that you'll likely have on hand.  i added extra salt, a few shakes of onion powder and some nutritional yeast.  i think the flavor would be richer using vegetable broth in place of the water so i'll try that next time.  before i blended it all up i salvaged a few chunks of broccoli and then added them back to the soup so that it would have some texture.  easy & healthy!  thank you!
