Creamed Celery (Comfort Food)

What you need: 

1 bunch celery, cleaned and diced small
2 cups (0.5 litre) soy milk
1 small onion, diced small
1 oz (25 g) vegan margarine
1 oz (25 g) wholewheat flour
Salt and pepper
Dash tabasco (optional)
Bread crumbs (optional)
1/4 cup (25 g.) nutritional yeast or soy cheeze

What you do: 

Place celery and soymilk in saucepan; cook on low heat until celery is tender. Drain and reserve soymilk. In another saucepan, melt margarine and sauté onion. Add flour and make roux, blending in the soymilk the celery cooked in to make cream sauce. Season with salt, pepper and nutritional yeast to taste. I like a dash of tabasco to give it a lift. Add celery. You can serve this as is, or place in an ovenproof pan, top with bread crumbs and brown briefly under the broiler.

SO HOW'D IT GO?

Yabbitgirl, you might like to try this subbing a small head of cauliflower cut very finely instead for the soymilk/flour combo; add the cauliflower to the onion and saute with a splash or two of water (fat free too!), when the onion is starting to soften add more water and blitz the cauli/onion/water combo with a hand-held blender, taste and season and then add "our" beloved celery!  The cauli really thickens the soup up x Kiki
