Creamy Avocado Dressing
What you need:
2 ripe avocados, chopped
2 spring onions, finely chopped
1 clove garlic, minced
lime juice, to taste
water, as needed
sea salt, to taste
1/2 teaspoon cider vinegar, optional
What you do:
1. Place onions, garlic, and avocado in blender.
2. Add lime juice and water until desired creaminess.
3. Sprinkle in sea salt, and vinegar for a tangier dressing.
Voila! A simple dressing for your salad.

This was delicious. I used lemon juice and added the zest of the lemon. I also added about 1/2 cup of water to get it to blend smoothly in my blender. A new favorite!
This was very refreshing. I am trying desperately to get my husband off bottled dressings, but to no avail. I hope he soon realizes that homemade is so much better than anything from a bottle.
I did use lemon but will use lime next time for sure.
A lite and tasty mayo substitute. I used1 lime, 1 avocado some cayenne infused white vinegar and some celery salt, which came out to fast so I added some stevia. The saltiness melanged just right with the lettuce, vege farm ham, mushroom , and tahini dressing sandwich.
this is a great base recipe! i used the following:
2 avocados
1 lemon
2 limes
1 mini cucumber
2 Tbsp ACV (approx)
and probably a few Tbsp of Agave
Everything else I left the same. YUM!
This recipe was wonderful. I changed it up a little and only did one avocado. I added some old bay seasoning, dill, celery seed and replaced lime with lemon juice (it was all I had). I did use the cider vinegar and since I was using it as one would use mayo in a mac. salad, I didn't add water. It was light, fluffy and PERFECT for my pasta salad. What a great way to use an avocado!
I am glad someone else has thought of this idea with fresh avocados.
I make a similar dressing for my salads with about 2 oz. avocado, 1 oz. (2 T.) vinaigrette and 1-2 oz. water. I puree the dressing with an immersion blender and use this on my salads. This makes about 2/3 cup.
Sometimes I toss in 1 oz. of fresh cucumbers and cut back on the added water. The dressing has even more body and creaminess without tasting like cucumbers.
And I sometimes vary the dressing with whatever I have premade in the refrigerator. This is good with commercially prepared dressings to give the avocado dressing a different flavor. I made a lemon one with a bottled dressing my mom brought home. Sometimes I make poppy seed.
