Creamy Peanut Kale

What you need: 

1 tablespoon vegetable oil
1/3 onion, chopped
1 garlic clove, chopped
1/4 cup natural peanut butter
2 tablespoons Bragg's Liquid Aminos
1/4 cup vegetable broth or water
1/2 teaspoon coriander
1/4 teaspoon chili powder
1/4 teaspoon cumin
1 bunch kale, chopped

What you do: 

1. In a pan, heat vegetable oil. Fry garlic and onions, until translucent. Meanwhile, in a bowl, mix peanut butter, Bragg's, broth/water, and spices until the peanut butter has dissolved, and it has turned saucy.
2. Add kale to the pan, and cook until the leaves are dark green and wilted.
3. Add the peanut butter sauce to the pan. If it is too dry, add broth/water to reach desired consistency.

SO HOW'D IT GO?

The peanut-y kale was so good I ate in on its own with fresh cilantro on top; I didn't want to add anything else that might take away from its tastiness.

Just fantastic.... this recipe is by far my favorite way to cook greens.... I have used turnip and beet greens, swiss chard and kale in this recipe. I spiced it up with a dash of cayenne and also added tamari instead of liquid aminos... Thank you so much for this amazing recipe - it will be a staple in our household!

I just made this for lunch. I didn't measure anything, just sort of eyeballed it since I had a bag of kale and didn't know how many cups there were in a bunch so my measurements were going to be thrown anyway. I ate it with spaghetti noodles and it was just amazing. I'll definitely be making this again.

I like to add coconut milk when I make this and sometimes use almond, cashew or seed butters and it always turns out divine. Kids love it too! Also can be pureed to make a pesto-like sauce or can add to other sauces, foods ( like hummus ), etc to boost greens content in picky kiddos.

this was sooooo good! i added some chopped ginger during the onion-cooking stage. and next time, i might add some chili garlic sauce. but it's super tasty as is. yay kale!

I wasn't expecting too much from this recipe, mostly because the kale recipes I've made up till now have been...not bad, but just sort of 'blah'.  But this was delicious!  It didn't taste like any kale I'd had before.  Mmm, I'll definitely be adding this to my box of recipes :)

Made this for lunch today--the sauce is amazing!!  I'm going to use it again for other veggies/grains.  I added some Szechuan pepper and it was dee-lish.  I also added the sesame seeds and some julienned carrots.  Thanks for the great recipe!

I made this with cashew butter since Im not great with peanuts.
It was tasty, the Kale could probably of cooked longer but the kale here is different from home, much more stiff...
great recipe!
