Curried Chickpea Salad Sandwich Filling
What you need:
1 15 ounce can chickpeas, rinsed well (2 cups soaked boiled and cooled)
1/4 + cups Vegenaise or another vegan mayo
1/4 red onion, finely diced
1/8-1/4 cup carrots, shredded
1 clove garlic, minced
2 tablespoons or more curry powder
1 teaspoon garam masala
a few dashes hot sauce, or to taste (I use a habanero salsa, it isn't too vinegary)
salt
pepper
What you do:
Mash chickpeas well, leave some texture to it, add carrots and onion.
In a second bowl, combine vegan mayo, garlic and seasonings, re season to taste.
Add to chickpea mixture and chill 2 or more hours.
Serve on bread or toast, goes well with soups.

This was great, the only thing I left out was the carrots. And I made a little more sauce than the recipe called for. I love it when I find a recipe that is so easy and so delicious! Thank you!

Great in a pita to take to work..I used a little less curry powder and added crushed pineapple and dried cherries/raisins....recipe also works well with seitan.
This was delicious! The only change I made was adding halfed red grapes to the recipe. This added a nice texture and also a sweetness to the savory.
Terrificly Scrumptious! Although due to the fact I'm acquiring a cold I septupled the amount of garlic and added a few dashes of braggs to the mix, it's still the best sandwich filling I've ever had! Splendiferous on Rye Bread!
This is pretty good, but I was hoping for more from this recipe. It sounded so good. I just don't know what to do with it to make it more to my liking either. It's still good as a dip for celery or other veggies though.
I didn't care for this recipe. I thought the spices were too strong and made me feel like I had dragon breath for the rest of the afternoon even though I brushed my teeth twice! I don't think I will try it again even with less spices. It just wasn't for me. :o
This was very good and the next time I'll modify it like so: a little more mayo, a little less curry and microscopically mince the onions.
This as delicious! I, too, thought that all that curry powder would be way too strong, but I was wrong. :)
veryvery good. Left out the garam masala & thought that 2 tbsp curry would be too much, but I was wrong. It was fab in whole wheat pitas!
