Dragonfly's Bulk, Dry Uncheese Mix
3 cups raw, organic cashew pieces
2 cups nutritional yeast (I like Red Star or Vegetarian Support)
3 tablespoons seasoning salt
3 tablespoons garlic powder (not garlic salt)
3 tablespoons onion powder (not onion salt)
8 tablespoons arrowroot powder (can use cornstarch, but it is not stringy like arrowroot)
1. Using a very dry blender, blend the nuts until they are very fine.
2. Add all ingredients, and blend in batches of about 1 cup.
3. Mix in a dry container.
4. To make sauce, add heaping 1/2 cup mix to 1 cup water, and stir over heat until thickened.
Use less water and add salsa for queso dip. Pour over hot veggies and/or pasta. Spread on vegan bread and toast for grilled uncheeses, or look up my enchilada recipe and use it that way.
You can keep this tightly covered in the fridge for about 6 weeks.
SO HOW'D IT GO?
I've made this twice. I can't imagine not having it on hand now. I make quick pasta sauce out of it, and a cheese-less queso dip, and I put tons of it on popcorn. I also throw it on things in place of parm: soup, pasta, beans... It's a classic!
This stuff is great! I don't usually like nutritional yeast cheese sauces, but this stuff is awesome. I made it in my food processor and used the corn starch because that's what I had, but it all came out great.
A-MAZNG! This is the most versatile and delicious recipe! I have used it for Mac and Uncheese and Queso so far! I brought it to a party where everyone was anti-vegan...........they ended up asking me for the recipe! FIVE BRILLIANT STARS!

I have a similiar recipe I got in the back of my nutritional yeast... But I just use flour, cornstarch, yeast and water. It's amazing. If I want nacho, I use taco seasoning :)
Wow! Omni hubby hates it when I try to slip him fake meat, or fake cheese, so I presented this to him as a "garlic sauce for pasta". He wanted to know what was in it, because, "it tastes just like cheese!" Next time, he wants me to try it with more yeast and less garlic. Thank you, this was wonderful! :-*
:) I made this and was very pleased. I'm always looking for cheese alternatives and this one fit the bill for a mock cheese sauce. I served it over a baked potato with broccoli and my 80 year old Dad had a fit! He went back for seconds! Thank you, Thank you.
The one thing I will do next time is use about half of the salt though. I'm not much of a salt lover and it was a bit much.
If you plan on keeping this as a staple in your pantry, you can buy nut flours online. Fast alternative to grinding your own and will make a smoother sauce. Look here: http://www.nutsonline.com pricey, but another alternative. ;)b
I have used this recipe more than any other vegan recipe... I used to be a Mac n Cheese addict and this is the only recipe I have encountered that REALLY satisfies. This is soooo much better than other recipes for Mac n Cheese that come out dry, and with a souffle-like texture. Also nothing beats the fact that you can make the dry mix and keep it on hand to have cheez sauce ready in 5 minutes. This is the best "instant" sauce to have on-hand for pasta/veggies... Thank you!!
Ok, I don't know what I did wrong here but this came out REALLY REALLY gross. The raw powder itself tasted good, oddly enough, but when I mixed it with water it had an unappetizing, grainy yet gelatinous texture, like jam and just didn't taste good at all. I tried it on veggies, pasta, etc, it was completely inedible. I used cornstarch instead of arrowroot, half cashews and half sunflower seeds. The only thing can think is maybe the seasoning salt, I didn't buy seasoning salt, I used some that I had lying around the kitchen, maybe it wasn't very good. I'm super disappointed, I'll try this again sometime but next time I'll be sure to divide the recipe in half so if it comes out bad I haven't wasted so much ingredients...
