Easy Fudge

What you need: 

6 tablespoons margarine
3 1/2 cups confectioners sugar
1/2 cup sifted cocoa powder
1 teaspoon vanilla extract
1/4 cup soy milk
1 cup chopped nuts(optional)

What you do: 

Lightly grease a 5x9-inch loaf pan using a little of the margarine.
Place the remaining margarine, vegan sugar, cocoa, vanilla and soy milk in a heatproof mixing bowl or the upper part of a double boiler (I use a small pot in a large pot of water).
Place the bowl or boiler over simmering water and stir until smooth. Add nuts if desired.
Pour the mixture quickly into the prepared pan. Chill thoroughly and cut into squares.

SO HOW'D IT GO?

i made some of this fudge (2/3'd the recipe) and it was.. err... is ... delicious!

I made a few changes...

when i 2/3rded the recipe, I used a little less than 2 cups of sugar (maybe 1 &3/4)

I still used the 1/2 cup cocoa powder

and I didn't include the nuts.

Altogether, oh my god, awesome!

It tastes fudgey (and is cooling in the fridge right now... I stir it every once in awhile, but certainly not to taste it...  ;) ).

mmmmm mmm mmmm. i had a craving for dessert but was all out of flour so i couldnt make cookies or brownies or cake. this was the perfect solution! i used 1/2 cup less sugar and 1/4 cup more cocoa as suggested and it turned out great. im waiting for it to chill but its taking a while and had to sneak a bite. the taste is very good.

I agree with almost everyone else, this recipe is VERY sweet. I mean geez, I adore sugar. I'll eat it straight up sometimes. Also, mine never set... Perhaps I put a little too much soy milk in. Mine is somewhere between pudding and icing.....

Yum!  I did the cup less sugar, 1/4 cup more cocao powder thing and used almonds, almond milk and almond extract for a marzipan feel.
