Easy Fudge

What you need: 

6 tablespoons margarine
3 1/2 cups confectioners sugar
1/2 cup sifted cocoa powder
1 teaspoon vanilla extract
1/4 cup soy milk
1 cup chopped nuts(optional)

What you do: 

Lightly grease a 5x9-inch loaf pan using a little of the margarine.
Place the remaining margarine, vegan sugar, cocoa, vanilla and soy milk in a heatproof mixing bowl or the upper part of a double boiler (I use a small pot in a large pot of water).
Place the bowl or boiler over simmering water and stir until smooth. Add nuts if desired.
Pour the mixture quickly into the prepared pan. Chill thoroughly and cut into squares.

SO HOW'D IT GO?

I made this for my very first fudge attempt today and my entire family declared it a success! I did make a few changes after reading the reviews. I reduced the sugar by 1 cup and increased the cocoa by 1/4 cup. I also left out the nuts, and the vanilla since I was using vanilla almond milk. Very easy and yummy recipe!

I followed the directions roughly... Skipped the nuts and used shortening instead of margarine and added 1/2 cup of all natural peanut butter and I've only tasted the batter thus far but it's really good. It tastes a lot like chocolate no bake cookies without the oatmeal, which is a-okay with me. I used the entire 3 1/2 c powdered sugar and it could have probably done without the 1/2 c, but I like to go all out when I'm being unfaithful to my healthy diet so sweet was fine with me.  >:D Thanks so much for the recipe!

I'm so happy with this fudge! I went with the 1/2 cup less powdered sugar and 1/4 cup more cocoa, and it's pretty amazing.

alright, i was disappointed with the results i got with this recipe.  i used the 1/2 sugar and +1/4c cocoa that has seemed to serve others well, but after cooling over night and even spending hours in the fridge, this fudge did not 'set' at all.  it has the consistency of thick cake frosting, but tastes like brownie batter; i have to scoop it from the dish with a spoon.  at least this will prevent me from devouring the entire batch in one sitting.

This is very very sweet, but my roommate loved it.  I added some peppermint extract and gave it to her for her birthday.  I also used a 3:1 sugar to cocoa ratio.

Yumm .. I was bad and tasted before it went into the freezer for cooling!  Deeelicious :)  I hope it sets.  I did the half the sugar, add more cocoa thing and added nuts.  Also added plain flat cookies to the bottom of pan before I poured in the fudge to break up some of that sweetness.  I can't wait til it hardens.  If it doesn't, I'll eat it anyhow.  Would adding flour help to harden it do you think?

WHERE WAS THIS RECIPE WHEN I WAS ON MY PERIOD~~~~?!  : ;)b ;)b ;)b  I didn't have enough sugar to make anything chocolaty this month, so I ate two store-bought vegan cookie bars and what was left of the bag of non-dairy chocolate chips~~!  >:D (Shut up, I'm 12, I can't help it~! xDD) No, seriously, I just made some and tasted  ;) *cough* the uncooled version. AWSOMEE~! I did use a cup less sugar though.... but still, AMAZING~! I'll remember this later~~! (I better... or who knows what will become the of the vegan contents of this house~?!  ^-^ Btw, I'm the only veggie in my family... so ya know... at THAT time... I get more pissed off than other girls... yea. XD) But //rant over// anyways this is the first fudge I had since goin full-out vegan, and it PWNS~!  :)>>> :)>>>

This recipe is AMAZING!!!!!! This is probably the most delicious fudge i have EVER tasted!!! no joke!! i ate half the pan in one night! if you're looking for something chocolately to satisfy a craving and deligiht your taste buds, this is DEFINITELY it!! thank you so much!

It tastes really great, but I think I did something all funky because it didn't set up.  So, the consistency was kind of frosting-like.  I used 1/2 c. less sugar and 1/4 c. more cocoa as suggested and omitted the nuts as I'm allergic to them.  Any suggestions for how to make it set up?
