Easy Pancakes
What you need:
2 1/2 cups all purpose flour
2 tablespoons sugar
2 tablespoons baking powder
1 tablespoon vegetable oil
1 teaspoon salt
2 1/2 cups nondairy milk or water
dash cinnamon, optional
What you do:
1. Lightly mix all ingredients in a fairly large bowl; leave 5-10 minutes to rise. It's important only to mix the batter enough to moisten, as overmixing will make the pancakes tough.
2. Gently fold down; leave again for 5-10 minutes if you have the time, and gently fold down again. (I don't usually bother, since everyone's starving!)
3. Cook over medium to medium-high on an oiled skillet until golden, carefully breaking apart any large lumps with the spatula. Serve immediately.

Best Pancakes ever!!! :D
I recently stopped eating eggs (and other animal products), but still wanted to be able to eat pancakes. I've made these pancakes every week for the last 4 or 5 weeks! They are so easy, and some of the best pancakes I've ever had! My 15 month old daughter loves them too. Thank you for such an easy, tasty recipe! ;)b
OH MANnnnNN the batter is resting as we speak and I can't stop tasting it. DELISHHHH. I stirred in blueberry preserves and cinnamon. can't wait to see how they turn out.
These pancakes are awesome! The only thing I changed was, I added 1tsp of Almond extract and now I make them for my fiance all the time! :)>>>
These were FANTASTIC! I followed the recipe exactly - only added some bananas and chocolate chips! - and they turned out perfectly. These are definitely the best pancakes I've had since going vegan, and maybe the best pancakes ever. Thank you for the recipe, YUM!

I am currently making these for the first time, and they are awesome. My only complaint is how thick the pancakes are. I think next time I try this I am going to use less baking powder and add a little more "milk". BTW, I used almond milk. I usually use rice milk in my house, but the store didn't have it, so next time, I will probably use rice milk.
These turned out really thick and heavy for me. I followed the recipe exact and used whole wheat pastry flour. I always have used this recipe for pancakes http://vegweb.com/index.php?topic=16252.0 without any problems, but wanted to try a different recipe. Since this one doesn't use egg replacer, I was exctied to give it a chance. They still tasted ok, but I won't be making this recipe again.

I did the recipe as you said, except for the baking powder which I added only 1 1/2 tablespoons. Also, once they were done I tried them with peanut butter but it was too 'salty' for me lol so I smashed some bananas and put it over the pancakes and sprinkled a bit of cinnamon, and wooow I fell off my feet at that moment! :D

I'm making a pancake birthday cake for my boyfriend using this recipe! I make these all the time, and they are super simple and really delicious. Definitely reccomend this recipe.
