Falafel Loaf with Special Sauce

What you need: 

1 box falafel mix
1 package veggie burger crumbles (or veggie sausage if you feel spicy!)
3/4 cup breadcrumbs, mine were the bigger "panko" style, plain
3 teaspoons Ener-G Egg Replacer powder (no water added)
1/4 - 1/2 cup salsa or ketchup (or both)
2 - 4 cloves minced garlic
1/2 medium onion, grated
optional: sautéed chopped portobello, corn, grated carrot, etc, but I prefer it just as is
"Special" Sauce:
1/2 cup ketchup (you can use tomato paste but that might be too fancy for me:)
2 cups vegetable stock
3 tablespoon corn starch, 1 clove garlic, minced and onion powder, to taste

What you do: 

In a large bowl, mix falafel flour with Ener-G Egg Replacer, and add 1 cup cold water, and let set up for 10-15 minutes. when thickened, add the entire package of veggie burger or veggie sausage**, mixing with hands until blended. Add remaining ingredients and mix well. Press into a oiled loaf pan and if you want to do it like mom, brush some ketchup or salsa on top, bake at 375 for 45 minutes and let set for 5 before serving. This goes well with mashed potatoes and green beans.
Special Sauce:
Combine all ingredients in a sauce pan, heat until boiling while stirring constantly. Serve over loaf and stuff.
**For a "meatier" loaf, use 2 packages veggie burger or veggie sausage plus another 1.5 teaspoon Ener-G Egg Replacer for a BIG loaf. For a smaller loaf, use 1/2 box falafel and one package veggie burger or veggie sausage. Cooking time will vary.

SO HOW'D IT GO?

p.s. when they edited this, they wrote veggie "crumbles" what i actually use is "gimme lean" it comes in a tube like uncooked meat. a crumble will most likely not hold together the same if you tried with the crumbles and it fell apart, sorry, but i think they changes it during editing.

i turned my creation into a "mexi loaf" cuz, im bringin mexi back...
i added 1 chopped jalapeno, some corn kernels, black beans, a bit of cilantro, and some chopped tomato.
oddly enough, the cold leftovers are fab smeared with avocado :D
