Fettuccini Alfredo

What you need: 

1 pound whole wheat fettuccine
1 1/2 cups frozen sweet yellow corn, thawed
1 (14 1/2 ounce) can coconut milk
2 teaspoon onion powder
1/2 teaspoon garlic salt
1/4 cup nutritional yeast flakes
1 tablespoon vegan butter (I use Earth Balance)
1/4 medium onion, sliced
4 ounces vegan cream cheese (I use Tofutti Better Than Cream Cheese)
1/2 teaspoon nutmeg, optional

What you do: 

1. Cook the fettuccini according to package directions; make sure to stir it now and then, or it'll stick to itself. After draining, set it aside and cover it with a wet cloth (to prevent it from drying out).
2. Blend the corn kernels until completely pulverized. Add the coconut milk, onion powder, garlic salt, and nutritional yeast. Blend. Sauté the onion in the margarine in a medium pot until glossy-clear-brown (you know, cooked.).
3. Add the "cream cheese" and lower the heat so that it melts without burning (medium-low heat).
4. Add the coconut/corn mixture to the pot and heat until just boiling. Add nutmeg if desired. Toss with the pasta, and serve immediately.
The sauce really thickens once it cools, especially if it's refrigerated, so best eaten fresh. I like to add some steamed broccoli and seitan "chicken." For lower fat, you can use unsweetened soymilk instead of coconut, but it changes the creaminess a bit (as in, less so.).

SO HOW'D IT GO?

I tried this recipe tonight. I used soy milk instead of coconut milk so maybe that's where i went wrong. It came out fairly bland and reminded my more of mac'n'cheese sauce =/ Don't think I'll be making this again.

wow this is delicious! i added steamed brocolli and sauted some mushrooms with onions. i used soy milk because i read that other people said the coconut milk was too sweet and it turned out great. it wasnt too thick and it wasnt too runny. it was really easy to make. and thats saying something for me....im still in highschool so being able to cook this fast was great. my dad..who is the perfect epideme of a picky grumpy old man loved it.

this look great, i really want to try it but i dont have the toffuti cream , does anyone know what i could try?

there are recipes on here for vegan cream cheese... probably under dairy or cheese

That was so good....instead of corn I sauteed mushrooms and instead of coconut milk I used unsweetened organic soy milk. This recipe is even better then real Alfredo sauce. I cant wait to make it again.

I read the reviews before making this so I altered my shopping a bit.  I have never used coconut milk before, but I found cans of it at my grocery store  :o!  I thought for sure I was going to have to go to a health food store for it.  I bought the unsweetened version of it. It was really, really good!  Didn't taste like coconut at all.  I used more salt and more NY then the recipe called for and added a ton of steamed broccoli and this recipe was to die for!  I also used canned whole kernel corn rather then frozen simply because of convience. 

Wow oh wow, this was good!

My son didn't eat much of it, but he wasn't feeling well and I think that was why.  Poor baby.

Just made this for lunch and it was very nice.  I added 2 cloves of garlic instead of the garlic powder and lot's of broccoli (which complemented it really nicely and I should have added more!!) and peas.
I used rice milk, not to make it low fat but because we didn't have any coconut milk in (also coconut milk cost so much now I feel it would have out-priced the meal)
I felt it was quite sweet but my 2 year old and meat-eating husband LOVED it and he even went looking for more!!

BEST ALFREDO SAUCE EVER!!! I've tried them all and this is the most like real alfredo. I used penne and added minced garlic instead of garlic salt. I also could only find the herb version of Tofutti cream cheese but it was still to die for! It was actually a little stringy, but I like that. Thanks a ton!!  :)>>>
