Gluten Free Cheese

What you need: 

1 cup water
1 cup glutinous rice flour
1/4 cup tapioca flour
1 teaspoon salt
1 teaspoon garlic powder
speck of saffron powder (for yellow color)
2 tablespoons tahini
2 tablespoons olive oil

What you do: 

1. Sieve flours into big bowl.
2. Add sugar, salt, garlic powder, saffron, tahini and stir well.
3. Knead with your hands until the dough is soft and pliable. Add more rice flour if too sticky or more water if too dry.
4. Shape into 3cm rounds 3mm thick (or other shapes you prefer) and add to a large pot of boiling water.
5. When the balls rise to the top (1 minute or less), scoop out and place on plates.
6. (Optional) Fry one side to make a crunchy crust. The other side will remain sticky and plasticky pliable.
On a pizza the "cheese" will soften in when heated and harden when cold just like normal cheese.

SO HOW'D IT GO?

No don't try it. This recipe is all wrong. Two ingreients on list are never added (water and oil) and another (sugar) is added without a measurement. And "balls" 3 cm round, and 3mm thick (a very thin wafer, but hardly a ball) are dropped directly into boiling water.  Taste was actually quite good, but recipe made more of a cheese flavoured biscuit dough. Would love to try to make a tapioca cheese if anyone has another recipe!

Hi sorry to reply so lately! :D
Actually I'm still experimenting with the cheese recipes.
It seems that the tapioca flour is to rubbery.  Its possible to choke on this if too much is added - its similar to the MOCHI recipe in Japan.

What I'd do differently is use
agar agar
tapioca flour
try arrowroot or glutious rice flour if you cannot find tapioca.

can you suggest an alternative to tapioca flour?  i can't find it anywhere.  would sweet potato starch work?
