Homemade Granola Crunch

What you need: 

6 cups rolled oats ( I use multi-grain)
1/2 cup sunflower seeds
1-2 cups chopped nuts (I like almonds and walnuts)
1/2 cup wheat germ
1/3 cup flax seeds (whole or ground)
1/4 cup maple syrup
1/4 cup oil
1/4 cup turbinado sugar
3 teaspoons cinnamon
1 teaspoon salt
2 teaspoons vanilla
1 1/2-2 cups water
2 cups dried mixed fruit

What you do: 

1. Preheat oven to 300 degrees F. Mix all ingredients except the fruit. For non chunky granola, skip to step 3.
2. For granola with chunks, slowly stir mixture in pot over low-medium heat until ingredients become sticky and form clumps (it will be somewhat hard to stir). If you need to add more water, do so.
3. Dump mixture onto 2 large jelly-roll pans, spread evenly. Bake for 1-1 1/2 hours (less time is needed for the granola with no chunks), stirring every 15-20 minutes. Granola will be a golden brown when it is ready.
4. Cool granola by spreading it out on flattened paper grocery bags. Add dried fruit.
Store in an air tight container; it will last several weeks, though ours is always eaten by then.

SO HOW'D IT GO?

LOVE this recipe- total easy and delic! i made it pretty much as is, but added pumpkin pie spice b/c wanted that seasonal smell in my house.  added raisins and unsweetened coconut in the end.  my new "go to" recipe!! thx!

I have made this twice now and am going to make it in the morning again. taking some to a friend for a birthday present. I always just mix everything (but the fruits for the end) and bake it with out doing the stove top thing, with some good chunks in it still. I am going to do almonds dried apple and cherries and apricot chunks for the fruit and nuts, and flax and sesame and sunflower for seeds tomorrow. good granola recipe.

This recipie is perfect. I've always loved eating granola in the mornings but the price has always made it too expensive for a morning meal. This recipie solves that problem. Not only is it flexible in terms of what you choose to put in it it tastes like store bought granola but better! I'm still playing around a bit with the variations but I mostly use almonds and flax seeds as the nut/seed portion and dried bananas and cranberries for the fruit. I HIGHLY reccomend using the crunchy version. A+

Wow, I can't wait to try this- it sounds great! I just have a question: do I need to use as much water (1.5-2 cups) in the batch before putting it in the oven if I do not plan on boiling it a bit beforehand?

This has quickly become my *favorite* granola recipe.  I make it at least once a week.  I sub apple sauce for the oil (even chunky works), replace the flax seed with more wheat germ and use walnuts, apricots, and raisins.  A few shakes of nutmeg and all-spice are a good addition too.  Bake it on a cookie sheet lined with parchment paper.  I've found it gets chunky even without stirring it in a pot first, which is great!  And in my opinion, it tastes even better with homemade almond milk (almonds, dates, water and a pinch of salt).  Takes the flavor to another level.  You can even add the leftover almond pulp to the granola mix before baking and it turns out great!  (Mix with the water before adding it to the other dry ingredients).

I like this recipe. I was after a not-so-sweet homemade granola, and this fit the bill. I made the chunky version (highly recommended) using walnuts, almonds, and pumpkin seeds for the nuts, raisins and cranberries for the dried fruit, and blackstrap molasses in place of the maple syrup. It toasted up nice in the oven, and kind of a darker color due to the molasses. It has a nice sweetness once I added the dried fruit. Perfect in a bowl with soymilk and sliced banana! Now I have energy and am ready to climb a mountain! Oh wait. I live in Wisconsin.

This is my go to recipe for granola now!!! Soo good  :)
I tried making it with pecan, walnut and almond. Skipped the wheat germ since I don't have any
and use less pumpkin seeds cause I dont really like it.

This is awesome.  I made 1/3 batch because I do not need 10 cups of granola to eat by myself.  I did not add the fruit or sunflower seeds.  It came out crunchy and chunky.  Next time I will change up the spices and add ginger pieces in it along with pecans.  ;)b
