Homemade Granola Crunch

What you need: 

6 cups rolled oats ( I use multi-grain)
1/2 cup sunflower seeds
1-2 cups chopped nuts (I like almonds and walnuts)
1/2 cup wheat germ
1/3 cup flax seeds (whole or ground)
1/4 cup maple syrup
1/4 cup oil
1/4 cup turbinado sugar
3 teaspoons cinnamon
1 teaspoon salt
2 teaspoons vanilla
1 1/2-2 cups water
2 cups dried mixed fruit

What you do: 

1. Preheat oven to 300 degrees F. Mix all ingredients except the fruit. For non chunky granola, skip to step 3.
2. For granola with chunks, slowly stir mixture in pot over low-medium heat until ingredients become sticky and form clumps (it will be somewhat hard to stir). If you need to add more water, do so.
3. Dump mixture onto 2 large jelly-roll pans, spread evenly. Bake for 1-1 1/2 hours (less time is needed for the granola with no chunks), stirring every 15-20 minutes. Granola will be a golden brown when it is ready.
4. Cool granola by spreading it out on flattened paper grocery bags. Add dried fruit.
Store in an air tight container; it will last several weeks, though ours is always eaten by then.

SO HOW'D IT GO?

This is a great granola recipe!  I made it with chunks and used less water and more agave/maple syrup than called for.  I also left out the wheat germ and used hemp seed in place of the sunflower seed.  This is going to make great gifts if we can quit picking at it here!

This is sooooo good, for the fruit I  added dried cranberries, dried apples and dried apricot.  I didn't have maple syrup so I used Suzanne's just like honey rice nectar.  It came out really good.    ;)

really tasty granola.  i didn't have any maple syrup on hand, so i substituted it w/ agave nectar and molasses.  i also used apple juice instead of the water.  the aroma of it baking is fantastic, you can smell it from my front porch.

I've got this in the oven right now and it's making my entire apartment smell incredible. I cant wait to add the currants and cranberries. Im going to surprise my friend with a homemade granola snack on our sunny Boulder hike tomorrow. Thanks so much for this recipe!

This is such good stuff!  I made my first batch with pecans and walnuts and added Turkish figs and dried strawberries.  I'm ashamed to say how little time it took me to finish it off.  8)

I'm making it now and it sure smells wonderful  :)
I forgot to buy sunflower seeds but I used everything else required.
I expected it to come out hard and crunchy, but its soft. I am slightly disappointed.  :( What did I do wrong?

My friends and family (who call me a health nut), LOVE this granola.  I follow the recipe exactly.  For the dried fruit I use a variety but almost always add dried apricots.........seems to get the best response.  Delicious

I have this in the oven right now.  For nuts I used 1 cup raw cashews and 1/2 cup almond meal and for fruit I am thinking dates and raisins.  I omitted the cinnamon.

When I spread this out, it looked remarkably like tuna fish.  Perhaps almond meal was a bad idea.  I'm hoping that when it is done it will just be extra crunchy and clumpy.

This is great. I just had a bowl with dried cherries and vanilla soy milk... YUM. At first my husband and I thought that the cereal was not sweet enough, but we kept grazing as we intentionally walked by. We will play around with flavors more when we make some next week. Thanks for the recipe. :)

I made this granola to use as Christmas presents and it worked wonderfully! The (teenage) boys I gave it to ate the whole 1.5 cups in one sitting--right when I gave it to them! I used walnuts and cranberries and probably almost doubled the given amounts... the cranberries made it really colorful! I also increased the cinnamon and sprinkled some cinnamon ontop when I had it spread out on the pan. Thanks for this recipe!
