Johnny Cake

What you need: 

2 pounds flour
2 tablespoons baking powder
4 oz sugar (or substitute your own)
2 teaspoons salt
1/2 cup soy milk (or your favorite)
1/2 cup water
4 oz vegan buttery spread (vegetable shortening will work also)

What you do: 

Sift the dry ingredients and form a well. Rub the buttery spread (or veg shortening) into the flour until crumbly, add sufficient milk and water to make a firm dough.
Knead well, adding more flour if too sticky, then allow to rest for 30 minutes.
Gently flatten into a baking pan (height of 2 inches), prick with fork on dough's surface and bake in a moderate oven-350deg for approximately 35 minutes. Should be lightly browned on top and done in the middle.
We serve it with a broth based soup called "souse" or eat it with tea/coffee or you can top with vegan soy "cheese" and melt. We also use preserves/jams on top.

Hmm, no cornmeal and a souse reference?  This must be a Bahamian poster (like me) :)  I'm trying this this morning.  Prawla, you don't have a vegan souse recipe by any chance, do you?

Hi Jaali, yes I'm from New Providence (Nassau, with Cat Island roots on both sides!)

Well, being Bahamian, you know all souse(s) are animal based, so think of the things that some people put in them to make it "stretch" as a meal.
So to make your vegan version, omit the meat and add the following:

VEGAN VEGETABLE SOUSE (simple)
2 large potatoes (Irish is best), peeled, cut in half, then cut 3-4 wedges
2 large carrots, peeled, cut into large pieces
1 large onion, cut in half then 1/8" thin slices
2 stalks celery, washed, sliced into chunks
6-8 cups water (or enough to cover vegetables, plus 1" above)
lemon/lime juice, to taste

Seasonings: salt, chili or habanero ("bird" or "goat" pepper), bay leaf, coriander seeds (optional), whole all spice black pepper, to taste
(Note:  The all spice is a strong flavored spice and can overpower the broth, use sparsely)

Optional Vegetables: shredded cabbage and/or any mix of root vegetables you like.

Directions: Prepare vegetables, place into large Dutch oven (big pot). Cover vegetables with water, add all spices (note for the big seed spices you can tie them into some cheesecloth to make removal easier, don't forget the bay leaf).
Let simmer on med-high until vegetables are tender. Taste and adjust flavor as necessary add the lemon/lime juice last and more hot pepper if desired.

Jaali, I think its really the onions and celery that makes the souse smell so good (not the meat), so let me know if you liked the flavor better than the old souse (when it's cooking you may think of home! ;))

I forgot to add that some people like it a little sweet. So you can add about 1/4c granulated sugar (or vegan sugar, you can experiment with other sweetners if you like).

oh wow, I will have to try this. There is a Carribean restaurant here that serves Johnnycakes before your meal (similar to buns at other restaurants) and they are delicious.
