Johnny Cake
2 pounds flour
2 tablespoons baking powder
4 oz sugar (or substitute your own)
2 teaspoons salt
1/2 cup soy milk (or your favorite)
1/2 cup water
4 oz vegan buttery spread (vegetable shortening will work also)
Sift the dry ingredients and form a well. Rub the buttery spread (or veg shortening) into the flour until crumbly, add sufficient milk and water to make a firm dough.
Knead well, adding more flour if too sticky, then allow to rest for 30 minutes.
Gently flatten into a baking pan (height of 2 inches), prick with fork on dough's surface and bake in a moderate oven-350deg for approximately 35 minutes. Should be lightly browned on top and done in the middle.
We serve it with a broth based soup called "souse" or eat it with tea/coffee or you can top with vegan soy "cheese" and melt. We also use preserves/jams on top.

Comes out kind of like a scone, simple to make. I always thought johnny cake was made with cornmeal; I stand corrected.
